vegetarian 'meat'balls

Has anyone had any success making meatballs that actually stay together? I just

tried glutinous rice and tvp stewed in tomatoe soup and it kind of turned out as

tomatoe soup rice (still tasty, but not meatballs).

The lentil rice balls in Vegan Lunchbox turn out well. So do the " meat " balls in

Veganomicon.

The tofu balls in the Spaghetti and Tofu Balls recipe in La Dolce Vegan are

so good and they stay together as well.

Is " Vegan Lunchbox " and " Veganomicon " a premade thing? I haven't heard of them

and live in Australia where we don't have a very big selection of pre-made

vegetarian options.

No, not premade. They are two different cookbooks. If you have access to

amazon.com, you can find them there.

They are both cookbooks. Veganomicon is one of my favorites. I really

like v lunchbox too :)

This recipe is from vegweb and I've used it to make meatballs instead of

burgers and they held together just fine. I freeze them and then just thaw

out what I need to use and warm them in the micro and fold into the

spaghetti. For the recipe website, go to

*Mushroom Walnut Oat Burgers*

 

Ingredients (use vegan versions <http://vegweb.com/index.php?topic=15403.0>

):

 

4 cups water

1/4 cup Braggs Liquid Aminos or soy sauce

1 8 oz package tempeh, crumbled

1 tablespoon vegetable stock base (I used Vogue brand)

2 tablespoon nutritional yeast

2 tablespoon powdered egg replacer, no added water (I use Ener-G Egg

Replacer)

12-16 oz mushrooms (any, but I prefer crimini)

1 cup walnuts

1/2 re onion

3/4 cup carrots

1/2 cup or more, whole wheat flour

3 cups regular oats (not the quick cook kind)

 

Directions:

 

Place water, braggs, nutritional yeast, egg replacer, stock base and

crumbled tempeh in a large pot and bring to a boil. In a food processor,

grind the walnuts, mushrooms, onions and carrots and add to the pot. Boil

this mixture for 5 minutes. In a second bowl, combine the oats, and flour,

add to the pot. cook on medium for 5-8 minutes, or until extremely thick.

pour into a bowl and chill for 2 hours.

 

Preheat oven to 350 degrees F. Scoop out oat mixture and shape into patties

of desired thickness, I usually get about 14 from this recipe. Place on a

lightly sprayed baking sheet and cook for 15-25 minutes per side.

 

Cool, wrap and freeze until ready to use.

 

Serves: 10+
