However - someone asked this a few days ago - do we know whether the omegas in flax seeds are preserved when using the seeds in baking? My impression is that the fiber in the seeds protects the oil, unlike when you buy flax in oil form. Guest guest Posted February 19, 2010 Report Share Posted February 19, 2010 Jessica, Do you mean whole flax seeds? I don't think the omega 3's are available for absorption in those. If you mean simply that the oils in unrefined ground seed are somehow protected, I find that very hard to believe. Can you get more specifics about how that supposedly works? Jason was referring to ground flax; there are several sites on the internet that discuss this issue if you care to learn more or debate the science. I was just passing along what I'd heard.
