Guest guest Posted March 2, 2010 Report Share Posted March 2, 2010 I was asked to help children ages 6 to 9 in our church work towards a cooking honor that requires them to prepare a healthy 4-course vegan meal to eat at a banquet. I am looking for a tasty, healthy, kid-appealing, quick recipe for vegan soup. I would prefer the soup to have no pasta in it because I was going to have them prepare spaghetti and tomato sauce along with bread for the main course. Any ideas would be greatly appreciated!!! For the rest of the meal, I was going to have them cut up veggies and arrange them attractively on vegetable platters along with a special dip (suggestions for a veggie dip are welcomed). For dessert, I was thinking about fudgicools - carob powder blended with banana, vanilla, date sugar, and I think rice milk (I'm not looking at the recipe now!) and placed in the freezer in paper cups with a popsicle stick. You could call it something like lentil confetti soup, and grate colorful veggies to add in - carrots, squash, broccoli stems. It would cook quickly and be colorful and fun. Plus, it'd add protein to the meal. For the dip, what about a non-spicy salsa - with chopped tomatoes and bell peppers of all colors (yellow, orange, green, purple)? Or something with a tofu base, spun in the food processor - maybe with a little lemon juice and fresh herbs and cracked pepper? And I'm sure you could find great ideas in vegan cookbooks - these are just off the top of my head. Good luck and have fun! Guest guest Posted March 2, 2010 Report Share Posted March 2, 2010 My kids' all-time favorite soup is Taco Soup. I use the recipe in the Nava Atlas soup cookbook. The recipe calls for the taco chips to be arranged in the bowl with the soup, but we have them on the side. The kids eat a ton of soup that way. Thanks. I probably won't follow Canada's health guide but rather the PCRM one (the teachers should be okay with that since they are both vegan). As for the dip...Vegan lunch box has a white bean dip that sounds very good. I have been meaning to try it but haven't yet. You may want to consider that one. She might have it listed on her website. For the soup you could do a lentil or split pea. They are quick and easy. You can never go wrong with a simple vegetable soup (maybe with barley). My daughter (3) has a couple favorites: creamy soups (potato, etc) with bread pieces to dip (she likes to make the bread jump in and swim around before she eats it)- we had success with Bob's Red Mill Vegi Soup Mix (it has tiny alphabet pasta but if you blend it, it won't be noticeable) has directions for a creamed vegi soup on the back (it did take about an hour to cook) and it's fairly easy to make- just add onions, carrots, celery, and seasoning (we added a little salt and some chopped broccoli) But the all time favorite is Miso soup. It's light, quick, and healthy. All you need is miso paste, water, cubed tofu. We usually add small bits of broccoli (you can add a couple simple veggies) and let her add in her own Nori seaweed.
