Re Pasta Salad HELP

Thank you everyone!

 

You're absolutely right---why would she eat cucumbers & bell peppers in pasta

salad if she won't eat them normally? I'm on it. I have never been an Italian

Dressing person but I'll see if she is...that sure would be easy. And I'll put

veggies she tolerates (carrot, broccoli, peas, tomato) in it. Like the

bean/chick pea idea too!

 

I am approaching this as a one day at a time process: I need 5 days a week of

decent lunches. I only really have 2 so far (Chinese food I froze from our

local vegetarian Dim Sum restaurant, and soy yogurt + extras.) She really loves

" Smofu " tofu " jerky " , but I'm trying to replace that one. She will eat almond

butter & jelly, but she's not happy about it, so I'm trying to replace that too!

I haven't been following this thread but has anyone suggested Vegan

Lunchbox (cookbook and blog both) it's a little more complicated and

maybe for slightly older kids but it's full of great ideas.

I bought Vegan Lunchbox...but for me it's been a bust. I haven't made

one thing from that book and I bought it at least a year ago. The book

is organized horribly (in my opinion) and the recipes are far too much

time than I care to spend preparing a lunch! :)

Re: Vegan Lunch Box -- I had the original edition, and my MIL just bought me

the new edition for Christmas not knowing I already had the old one -- all

the recipes are the same, but the organization in the new one is far better.

She had a nice idea with the original (organizing it by menu), but I found

it hard to find something if I was just looking for, say, a muffin recipe,

or an idea for veggies to pack. The new one lists menu ideas but has all the

recipes organized into regular categories.

 

That said, I also don't use it much (though everything I have made from it

has been very good). We pack three lunches every day and I mainly aim to

make extra dinner and pack the left overs, along with some fruits and

veggies. Making something else extra for packing in lunches just isn't

usually realistic for me (beyond basic stuff like hummus) -- and I'm a

stay-at-home mom who spends a LOT of time in the kitchen!

Hi all,

I don't have the Vegan Lunchbox books, but use her website for recipes,

and we've always liked the recipes. The best one is still the tofu

mock-fishsticks! Seriously, if you haven't tried them, they are

delicious! I got a tofu press and am thinking of pressing some tofu

with lemon juice before making them next time . that would be good! And

Sheramy, I'll definitely look up those soups! I hadn't thought of the

Lorraine--Another great place to hide veggies is in a smoothie. Blueberries hide

Oh, smart! We've tried mixing greens into smoothies before, and he

wasn't going for the " magical green polka dots " we tried to sell. J

But, a dark smoothie might work. J

LOL! You're welcome, Lorraine! I do this for my ultra-fussy 10yo. He won't drink

a smoothie with spinach in it, if he sees me adding in the spinach. :P But if I
