I was at the point of hitting my head against the wall in frustration. I probably enjoyed your rant more than anyone. I was literally throwing away my third batch of waffles this week. I was about to throw the waffles iron out too! Your post gave me a good chuckle. But, really, I have been gluten free for years. I have always been able to make good waffles, now every batch I make sticks to the waffle iron. My daughter can't have corn, so ener-g egg replacer is out. I used to have a vegan/gluten/corn free + high fiber recipe that worked but I can't find it. Unfortunately, this area is empty in the otherwise very helpful recipe files. Now that you have solved the pancake problem, does anyone have a very good, reliable waffle recipe without eggs, gluten, dairy or corn? Guest guest Posted October 17, 2008 Report Share Posted October 17, 2008 The problem with sticking to the waffle iron may be solved just by applying a coating on the iron, even if it's a non-stick iron. I find that to be necessary. I let mine heat up a bit, then use a pastry brush to put a TINY dob of liquid lecithin on both sides, working it into all the ups and downs. I've heard many people recommend cooking sprays for this purpose, I haven't tried them, but I know that they are a mixture of oil and lecithin. I was able to use my non-stick waffle iron without any added non-stick coating for the first little while that I had it, but after awhile, the waffles started to stick, even though I hadn't changed my recipe. Hi Renee, Here are the pancake recipes in the files. They are filed in their own group rather than under 'breakfast' like most of the other morning foods. Guest guest Posted October 18, 2008 Report Share Posted October 18, 2008 Renee, liquid lecithin (you can get it in a bottle at most health food stores) has a superior quality of non-stickness (is there such a word??) to oil. The difference is not to be discounted. I discovered the power of lecithin years ago when I was making sprouted bread. It stuck to the pan worse than anything I had ever baked before. No amount of oil helped, I even tried baking the loaves on little liners of lettuce... still stuck like glue. However, once I started using a very thin coating of lecithin, problem solved. Guest guest Posted October 20, 2008 Report Share Posted October 20, 2008 It looks like you have lots of recipes to choose from, I just wanted to offer my support - my daughter is gf and allergic to nuts, dairy, eggs, bananas, corn, and a few more, so I'm used to dealing with this. I've had pretty good luck subbing 2/3 cup oil per cup of butter/margarine (she was soy-free too, so I couldn't find a margarine to use).
