Margaret Berry Stuffed French Toast (GF) 2 c mixed berries 1/2 t champagne vinegar 1/2 T orange juice 1/2 t lemon zest 5 T sugar, divided 8 slices bread (GF) (in .5 inch cubes) 1 c coconut milk 2 t vanilla extract 1/4 t baking powder 4 egg whites 3 T flax and 9 T club soda and 1t oil as egg replacer (let stand for 5 to 10 minutes until a gel forms) 2 t coconut oil 1 t cinnamon (or leave this out) 1 t ginger 1. Pre-heat oven to 400. Grease 9x9 baking dish. 2. Mix together berries, vinegar, OJ, lemon zest, and 2 T sugar. Set aside. 3. Place half bread cubes in the bottom of prepared dish. Cover with fruit and then other half of bread. 4. Mix remaining ingredients together in a mixing bowl until well blended. 5. Pour liquid mixture over the bread and fruit. Make sure all bread is covered. 6. Bake for 20 to 30 minutes until bread is brown and liquid incorporated. Guest guest Posted November 5, 2008 Report Share Posted November 5, 2008 I don't know any casseroles but for breakfast sometimes we make home fries with usually a mix of red and sweet potatoes with onion, red, orange, or yellow bell pepper, apple, fresh parsley, and garlic. Salt, pepper, or any seasonings you like. If you can have nutmeg, that's a nice addition. You could also throw in mushrooms, squash, some lemon zest, etc. The possibilities are endless. It looks and taste like fall so it's great around the holidays. It's also fairly simple to throw together. I like to use olive oil for frying/sauteing. Hope this helps! Comes together in minutes and can be made sweet or savory. Let me know if you'd like it and I can pass it on! Guest guest Posted November 6, 2008 Report Share Posted November 6, 2008 Here it is, from Madjur Jaffrey's " World Vegetarian " ingredients 2/3 cup chickpea flour (also called " besan " or " gram " flour) 1/3 teaspoon salt 1 cup water 1/2 teaspoon finely chopped rosemary or oregano or garlic powder 3 tablespoons extra-virgin olive oil 2 tablespoons chopped tomato 1 tablespoon finely chopped onion 1/4 teaspoon freshly ground pepper directions 1. Preheat the broiler. Sift the chickpea flour with the salt into a medium bowl. Slowly add 1/4 cup of the water, whisking constantly to form a paste. Beat with a wooden spoon until smooth. Whisk in the remaining 3/4 cup of water and let the batter stand at room temperature for 30 minutes, then stir in the rosemary and other herbs. 2. Heat 1 tablespoon of the olive oil in a 12-inch nonstick ovenproof skillet. Stir the batter once, pour it into the skillet and drizzle the remaining 2 tablespoons of olive oil on top. Cook the pizza over moderately high heat until the bottom is golden and crisp and the top is almost set, 2 to 3 minutes. Burst any large air bubbles with the tip of a knife. 3. Sprinkle the tomato, onion and pepper over the top, then place the skillet under the broiler and cook until the pizza is golden and crisp, 4 to 5 minutes.
