Recently, we made a cashew " cheese " and he loved it! But unfortunately the cashews aren't working for him. He gets a stomach ache and can't digest properly. He is GFCF and he can NOT do rice or soy either. Does anyone have any other nuts we can try and use to make " cheese " ? For pizza and grilled " cheese " sandwich? Or any other suggestions? I've had problems with nuts because of cross contamination. I get the raw 365 brand cashews at whole foods and they practice safe manufacturing to prevent cross contamination. Never had a problem with them. Without soy or rice, cheese is going to be really difficult! Have you tried hemp products? You could probably get something cheese like using hemp seeds instead of cashews. Sunflower seeds may work too. Can he eat nutritional yeast? I know recipes for cheese with nutritional yeast and rice or soy milk, that would probably work out well with hemp milk. I'll give it to you as it is and you can alter it and play around with it to get something that works for you. Makes good mac & cheese. 2 1/2 cups plain soy milk 2 1/2 Tbs white rice flour 1 1/2 Tbs large flake nutritional yeast 1 1/2 tsp GF soy sauce 1 Tbs granulated garlic 1 Tbs granulated onion 2 Tbs vegan butter 1tsp yellow mustard Whisk together first 6 ingredients in saucepan. Simmer 4 minutes or until thickened, whisking constantly. Whisk in butter and mustard, and simmer 10 minutes more. Serve on pasta, veggies, etc. I would imagine potato starch would be a good alternative to the flour. Hemp or almond milk, which is thicker in consistency, so you may need to play with the amount. Not really sure what would work in place of soy sauce. Pepper might help. Perhaps a spicy mustard would compensate for leaving out the soy sauce. Someone else may have some ideas. Good luck! Guest guest Posted November 8, 2008 Report Share Posted November 8, 2008 Hi Jennifer, I have used Brazil nuts instead of cashews in " cheese " and it worked very well. I've also used sunflower seeds with success. Hazelnuts also work well. One other alternative is cooked, white navy beans. They will have a different texture than the nuts and/or seeds, so you might have to work with adapting the recipe a little bit for them. My favorite " cheese alternative " is Rose's Melty Cheese (in our archives). It is thickened and cooked, so the beans might work well as a replacement in this recipe. I believe soaking the nuts will also help make them more digestible. We do have some recipes in the Files for cheese that don't use cashews. Guest guest Posted November 9, 2008 Report Share Posted November 9, 2008 hemp seeds, I was wondering about that...I think I saw a cheese recipe on the gone raw website...I would have never thought about using hemp seeds. as far as I know hemp would work with him...hemp milk is ok for him. nutritional yeast is ok for him as well. I use that as a parm sub all the time. as far as cross-contamination...I had wondered about that...I first tried with a regular store brand and when he had issues I tried with the 365 brand and still had issues. so, I don't think its a cross-contamination issue.. he also has issues with macadamia nuts. thanks for the recipe!!
