Guest guest Posted November 18, 2008 Report Share Posted November 18, 2008 I have a 3 year old allergic to wheat along with many other allergens, but I want to make him an awesome cake or cupcakes for his bday as he has never gotten to eat that. Does anyone have any ideas? I love this group by the way, always been here but never had a good question to post Thank you all for any suggestions...I also just remembered I need to look for a database of recipes on here too. " ...they have a basic batter for gluten free vanilla and chocolate cupcakes in there, and then some AMAZING flavored icings and toppings...It's a great book! Guest guest Posted November 18, 2008 Report Share Posted November 18, 2008 I made this cake for my grandson on Halloween and it was great, I left out the xanthan gum on purpose and it was great consistecy. It didn't have a lot of flavor so next time I would add more vanilla I think. Pound Cake Gluten-Free Baking and More. ______ Name: Pound Cake Ingredients: Dy Ingredients 1 cup white rice flour 1/2 cup cornstarch 1/4 cup tapioca starch 1 teaspoon baking powder 1/4 teaspoon salt 1/2 teaspoon xanthan gum Wet Ingredients 1 1/2 sticks (3/4 cups) butter,softened 3/4 cup sugar 1/4 cup milk 3 large eggs 1 1/2 teaspoons vanilla extract Directions: 1.Preheat oven to 350ºF. Grease and rice flour 9 x 5-inch loaf pan. 2.In a small mixing bowl, whisk together dry ingredients. Set aside. 3.In a large mixing bowl, cream butter and sugar together until light and fluffy, about one minute. Add eggs one at a time. Mix well between each addition. 4.Add dry ingredients. Blend until all ingredients are incorporated. Batter will be thick. 5.Add milk and vanilla. Blend until thoroughly combined, about one minute. Pour batter into prepared pan. 6.Bake for 45 minutes or until cake is golden brown and springs back to the touch. 7.Remove pan from oven. Allow cake to stand in the pan for five minutes before turning cake onto a cooling rack. 8.Allow cake to cool completely on the wire rack. Pour icing over the top of the cake. (Icing recipe below.) Serves 6 Lemon/Orange Variation Replace the vanilla with 1 teaspoon pure lemon oil or pure orange oil and stir the zest of one lemon or orange into the batter. Icing 1 cup powdered sugar 3 tablespoons water or milk 1/2 teaspoon vanilla 1.In a small bowl, combine all ingredients. His allergens are wheat, eggs, milk, peanuts, all nuts, chicken, turkey, strawberries, blueberries. I look forward to you guys responses, great group of people here!!
