Xanthan Gum

Xanthan Gum is derived from the fermentation of corn sugars, all corn

sugars are removed in the processing of Xanthan Gum.

 

This is for people with corn allergies. I remember someone saying they

had a sensitivity to xanthan gum a while back. Even though the corn

sugars are removed in processing, it it possibly for reactions to

occur if your extremely sensitive to corn.

Not all xanthan is soy derived. That's one of things we ask our suppliers

to disclose as we are very sensitive to the increasing number of people with

corn allergies.

 

Basically because xanthan is the castings of a mold (think of that black

stuff that grows on the cabbage which sits in your cold storage too long)

it's equivalent to say that the corn a cow of chicken eats one with a corn

allergy can react to. There are people that sensitive, but most with a corn

allergy do well with xanthan. Those with mold allergies or allergies to

fungi tend to have a problem with it though.

 

Xanthan can be sourced from corn, vegetables or soy as it's growth medium.

For what it's worth, we use only guar gum in our house. It is a

fraction of the cost and works 1:1 for recipes calling for xanthan

gum. My husband is allergic to corn, so this takes the worry out.

This is very helpful to me. My daughter can't tolerate corn and I knew there

was some connection between corn and xanthan gum but I couldn't remember what it

was. Is there a kind that it safe or is it all derived from corn? Do you know

if guar gum is derived from corn? Thanks! Renee

Guar gum is made from the guar plant. :) (I didn't know it existed

either until I looked it up *grin*)

Guar is a member of the legume family (like soy, peanut, beans, peas and

lentils). No corn.

It isn't actually derived from corn, but is grown in a corn media.

There is some that is grown in a beet media, I believe.

you have just solved a riddle for me. I think it's the xanthan gum

that's causing my problems. I'm very allergic to molds

me too Sherene, highly allergic to molds and fungi and can't use guar either

because of a legume reaction. Glad to help
