In the morning, plug it in and it is done when you get home. I like to throw in beans, sweet potato chunks, corn, frozen carrots, seasoning, maybe left over brown rice, water or stock. Superfast: Canned beans over toast Canned beans and salsa over green salad (taco salad) Big green salad with chickpeas or other beans or nuts/seeds Coleslaw with bottled dressing, nuts or seeds Couple cans of different beans with salsa & spices for chili Fruit salad with or without sauce (eg soy yogurt) Precut raw veggies Green smoothie Stir-fry precut veggies Scrambled tofu GF PBJ or other sandwich Canned/boxed soup Instant rice Instant bean dips Fruit out of hand Needs 20 minutes: Instant brown rice Non-instant white rice Potatoes cubed small (half inch) Lentils Pasta - add bottled or premade sauces, or oil and garlic Chop veggies for stir fry GF Master Mix: Pancakes Biscuits Bannock Crockpot prepared ahead: Chili Curry Rice and beans Soup Leftovers/make on weekend: Baked potatoes - add chili, salsa, spinach, or whatever you like Roasted veggies Cooked whole grains Freezer: Frozen veggies - add curry sauce for curried veggies - add Italian dressing for marinated veggies - add fav milk sub and thickener for creamed veggies - add tofu and premade sauce for Chinese/Japanese veggies Previously frozen curry, chili, pasta, rice, beans, or other meals GF waffles/pancakes/french toast GF veggie-burger or other meat analogue GF pizzas Cornbread, GF muffins, etc. Pam On Thu, Nov 27, 2008 at 1:03 PM, hollyhedge_2004 <bethbell wrote: > Does anyone have ideas for really quick meals for those days when you > are completely unable to spend more than a few minutes on preparing a > meal. > > Quote Link to comment Share on other sites More sharing options...

I heat up a can of vegetarian refried beans mixed with half a small jar of salsa. Spread a little of the beans onto half a corn soft taco tortilla and cook as if making quesadillas.
