(or SIMPLE recipe is ok too - I tried making a pizza crust from scratch last week and it was an absolute nightmare!). I just saw that Gluten-Free Naturals has a pizza crust mix but it's full of soy protein and I'm allergic to soy protein (too much soy when I was vegan!). Anyway, any tips would be great. I am craving pizza and though I CAN eat wheat if I want to, I try to avoid it and besides, it's not much fun eating pizza alone. We subbed the eggs for flax eggs (the measurements are on the package). Another one with really good flavor/texture is the Gluten-Free Pantry. The only trouble is they are both $$$$. The recipe calls for eggs and cheese, which could be subed. I've been meaning to try it but I forgot about it until I saw your question. Most cheeses are soy unless you can make your own of find a rice based cheese you like. Maybe you can/do use regular cheese, which works too! Then there's always the option of no cheese! lol I've also seen various potato based pizza recipes. I once tried one in which you slice a potato into slices like you would bread, and I think you bake it part way plain, then add toppings and finish baking it. I did not like the sauce combined with the potato. It would probably make a good white pizza though. I haven't tried that yet either. Having chronic pancreatitis limits my ability to eat so even though I have tons of food and ideas, I just can't eat! lol If you try the zuchhini crust let me know how it turns out. It will probably be months before I'm able to get to it! Good luck with satisfying your craving! To make life a little easier, I have mixed together all the dry ingredients in bulk and stored in a plastic container, so all that is required is to add the water, cook and whip in the margarine. Kim Melty " Cheese " 1/2 cup nutritional yeast flakes 8 teaspoons white rice flour 5 teaspoons cornflour (cornstarch) 3/4 teaspoon salt 1 cup water 1/4 cup vegan margarine (-OR- less) 1. Mix dry ingredients together in a saucepan. 2. Gradually add water to form a smooth paste. Stir in remaining water. 3. Place on heat and stir constantly until the mixture thickens and boils. Boil for 30 seconds. 4. Remove from heat and whip in margarine. Makes enough for a 12 " (30 cm) pizza Melty Cheese Mix 3 cups nutritional yeast flakes 12 tablespoons (1 US cup) white rice flour 10 tablespoons (7 1/2 Aust tbsp) cornflour (cornstarch) 4 1/2 teaspoons salt Using a whisk mix well. Store in an airtight container. To Make 1 cup Melty Cheese Mix 1 cup water 1/4 cup vegan margarine 1. Place Melty Cheese Mix in a saucepan. Gradually add water to create a smooth paste. Thin with remaining water. 2. Place on heat, stirring constantly until mixture thickens and boils. Simmer for 30 seconds. 3. As for the cheese, we don't usually try to replace the cheese on pizza. We have found that if you put some really good pesto on AND tomato sauce, it doesn't end up being too dry and is really very tasty!
