marshmallows and evaporated milk

some of my favorite holiday recipes use marshmallows and evaporated milk... are

there vegan versions of either one available commercially anywhere?

There are vegan marshmallows; they aren't cheap, but they taste/function the

same as any other marshmallow:

Both the marshmallows and the creme contain soy.

 

As far as evaporated milk goes, you can often use a can of regular (not

light) coconut milk in place of it in recipes.

Sweetandsara.com make vegan marshmallows - and my company, Angel Food,

makes a mix you can use to make your own vegan marshmallows ('cos it's

not as simple as replacing the gelatine with agar, unfortunately!).

For evaporated milk, you could use non-dairy milk powder and mix it up

with less water than usual?

Evaporated milk alternatives I have not seen commercially, but these are

some fast and simple alternatives....*

Allow

a can of coconut milk to settle (about ½ hour). The coconut cream will rise

to the top and can easily be skimmed off. The thinner liquid can be

substituted using a 1:1 ratio for evaporated milk. This is a bit higher in

fat than the other alternatives, but should yield excellent results. Coconut

milk has a distinct flavor all its own that may be best for desserts.

Equivalent: 1½ cups of Evaporated Milk

 

Directions: Put 3 cups of soy or rice milk in a saucepan. Cook over

medium-low heat, stirring constantly, until the volume is reduced to 1 & 1/2

cups.

Equivalent: Approximately 2 cups of Evaporated Milk

 

Ingredients:

 

- 1 cup Soy or Rice Milk Powder

- 1 cup Boiling Water

 

Directions: Combine the two ingredients in a blender, and blend until well

mixed.

I use cashew milk as a sub for evaporated milk (unless the milk needs

to be beaten up then I have no sub)

Vance's Dari-Free can be used as an evaporated milk sub by mixing it double

strenght.
