Guest guest
There are vegan marshmallows; they aren't cheap, but they taste/function the same as any other marshmallow: http://sweetandsara.com/products.php#vanilla There's also ricemellow creme: http://store.nexternal.com/shared/StoreFront/product_detail.asp?RowID=1248 & CS=ve\ gane & All= Both the marshmallows and the creme contain soy. As far as evaporated milk goes, you can often use a can of regular (not light) coconut milk in place of it in recipes. Guest guest
Sweetandsara.com make vegan marshmallows - and my company, Angel Food, makes a mix you can use to make your own vegan marshmallows ('cos it's not as simple as replacing the gelatine with agar, unfortunately!). For evaporated milk, you could use non-dairy milk powder and mix it up with less water than usual? Guest guest
Evaporated milk alternatives I have not seen commercially, but these are some fast and simple alternatives....* " Thinned " Coconut Milk* [image: PDF]<http://www.godairyfree.org/index2.php?option=com_content & do_pdf=1 & id=295> [image: Print]<http://www.godairyfree.org/index2.php?option=com_content & task=view & id=295\ & pop=1 & page=0 & Itemid=133> [image: E-mail]<http://www.godairyfree.org/index2.php?option=com_content & task=emailform & \ id=295 & itemid=133> Allow a can of coconut milk to settle (about ½ hour). The coconut cream will rise to the top and can easily be skimmed off. The thinner liquid can be substituted using a 1:1 ratio for evaporated milk. This is a bit higher in fat than the other alternatives, but should yield excellent results. Coconut milk has a distinct flavor all its own that may be best for desserts. * Evaporated Milk for Recipes I* [image: PDF]<http://www.godairyfree.org/index2.php?option=com_content & do_pdf=1 & id=1395> [image: Print]<http://www.godairyfree.org/index2.php?option=com_content & task=view & id=139\ 5 & pop=1 & page=0 & Itemid=49> [image: E-mail]<http://www.godairyfree.org/index2.php?option=com_content & task=emailform & \ id=1395 & itemid=49> Equivalent: 1½ cups of Evaporated Milk Directions: Put 3 cups of soy or rice milk in a saucepan. Guest guest
I use cashew milk as a sub for evaporated milk (unless the milk needs to be beaten up then I have no sub) Sherene On Dec 5, 2008, at 2:37 PM, Alice Leonard wrote: > Sweetandsara.com make vegan marshmallows - and my company, Angel Food, > makes a mix you can use to make your own vegan marshmallows ('cos it's > not as simple as replacing the gelatine with agar, unfortunately!). > For evaporated milk, you could use non-dairy milk powder and mix it up > with less water than usual? > Best wishes > alice > > On 06/12/2008, at 6:18 AM, Joan wrote: > >> some of my favorite holiday recipes use marshmallows and evaporated >> milk... are there vegan versions of either one available >> commercially anywhere? >> >> thanks, >> >> Joan > > > >
