Guest guest Posted December 7, 2008 Report Share Posted December 7, 2008 Roasted Leek, Rocket (Arugula) and Sweet Potato Salad 1 kg (35 oz) orange sweet potato, unpeeled, cut into 4 cm (1 1/4 " ) pieces 3 small leeks, trimmed, washed, cut into 2.5 cm (1 " ) slices 4 teaspoons olive oil 125 g (4 1/2 oz) tub plain soy yogurt 2 teaspoons wholegrain mustard 50 g (1 3/4) baby rocket (arugula) 1. Preheat oven to 190 C (375 F) or 170 C (340 F) for fan-forced. 2. Place sweet potato, leek and oil in a large roasting pan. Toss to coat. 3. Roast for 30 to 40 minutes or until golden and cooked through. 4. Meanwhile, combine yogurt and mustard in a small bowl. 5. Place vegetables and rocket (arugula) in a bowl. Toss to combine. 6.
