Christmas Bruschetta

Preparation: 25 minutes

+15 minutes to marinate

Cooking: 10 minutes

4 vine-ripened tomatoes, finely chopped

1 small red onion, finely chopped

1/4 cup olive oil, plus extra to drizzle

1/3 cup shredded basil

500 g (17 1/2 oz) GF bread stick (-OR- rolls etc.)

2 large cloves garlic, peeled, halved

1/3 cup pitted kalamata olives (-OR- green olives)

small basil leaves, to serve

salt and pepper, to taste

 

 

1. Combine tomato and onion in a medium bowl. Season with salt and

pepper. Stir in oil and shredded basil. Set aside for 15 minutes.

 

2. Preheat oven to 180 C (350 F) or 160 C (320 F) for fan-forced.

 

3. Line a large baking tray with non-stick baking paper.

 

4. Cut bread diagonally into sixteen 2 cm (3/4 " ) thick slices. Place

bread on tray: bake for 10 minutes or until toasted, turning over

halfway through cooking.

 

5. Rub each slice of bread with garlic. Set aside.

 

6. To serve, spoon tomato mixture onto toasted bread; top with olives

and basil leaves. Serve drizzled with extra oil.

 

 

Serves 8.
