Guest guest Posted December 10, 2008 Report Share Posted December 10, 2008 Christmas Bruschetta -- Preparation: 25 minutes +15 minutes to marinate Cooking: 10 minutes -- 4 vine-ripened tomatoes, finely chopped 1 small red onion, finely chopped 1/4 cup olive oil, plus extra to drizzle 1/3 cup shredded basil 500 g (17 1/2 oz) GF bread stick (-OR- rolls etc.) 2 large cloves garlic, peeled, halved 1/3 cup pitted kalamata olives (-OR- green olives) small basil leaves, to serve salt and pepper, to taste 1. Combine tomato and onion in a medium bowl. Season with salt and pepper. Stir in oil and shredded basil. Set aside for 15 minutes. 2. Preheat oven to 180 C (350 F) or 160 C (320 F) for fan-forced. 3. Line a large baking tray with non-stick baking paper. 4. Cut bread diagonally into sixteen 2 cm (3/4 " ) thick slices. Place bread on tray: bake for 10 minutes or until toasted, turning over halfway through cooking. 5. Rub each slice of bread with garlic. Set aside. 6.
