Roast Sweet Potato & Onion Wedges

Preparation: 10 minutes

Cooking: 1 hour

2 medium sweet potatoes, unpeeled, halved lengthwise, cut into 2 cm

(3/4 " ) slices

3 medium red onions, cut in thick wedges

8 teaspoons olive oil

3 teaspoons ground cumin

salt, to taste

 

 

1. Preheat oven to 180 C (350 F) or 160 C (320 F) for fan-forced.

 

2. Combine sweet potato and onion in a roasting pan. Drizzle with oil;

sprinkle with cumin or different spice of your choice. Season with

salt and toss to combine.

 

3. Roast veggies for 1 hour or until golden and tender, turning

occasionally,

 

 

 

TIP: Leave skin on sweet potato to help retain shape during cooking.

 

VARIATIONS: Try different spices, such as ground coriander.

 

 

 

Serves 6.
