ideas?!

I'm looking for some yummy ideas for Christmas dinners. I like trying

new things, and I have some company coming (not much, but some).

 

Dietary restrictions:

No gluten

No corn

No tomatoes

No dairy

No meat

Not too many beans and certainly no chickpeas or black beans

No, or little, garlic

No, or little, onions

Oooh, a challenge!

 

One vegan stand-by for holidays is stuffed squash or pumpkin. You'd

want to watch the onion/garlic level of such things, but it's

manageable.

 

Orange and cranberry relish

 

Tofu seems to be okay on your list, there are a number of pressed tofu

recipes, from cutlets up to full-blown tofu-turkey (stuffed with a

gluten-free bread or rice stuffing, of course).

 

We make mushroom or vegetable gravy.

 

Lots of vegetable accompaniments - salads with fresh or dried

cranberries (though I know most dried cranberries are coated with corn

syrup these days) or currants, cooked veggies, maybe in a

nutritional-yeast based " cheesy " sauce, green beans with almonds,

fresh fruits, crudites with some kind of yummy dip.

 

Mashed potatoes, or maybe scalloped in a dairy-replacement.

 

Sweet potato; perhaps roasted or glazed?

 

Pumpkin " puddings " (crustless pumpkin pie, whatever you want to call it.)

Oooh, thanks! There are some problems here (i.e. stuff my

kids/husband won't but can eat), but still some great ideas. Thank you so much!

You can try looking up zen buddhist recipes, as they do not use onions,

garlic and some other things. They do use gluten though so you'd have to

sift through or alter what you find.

I made this for thanksgiving and it was delicious! You could leave out the

garlic and onion. I did not use the stuffing recipe that goes with it. I

made raisin bread and made my own stuffing with that and cashews, onion,

celery and veg broth. I liked it better without the marinade as well. Next

time I'm leaving out the garlic and onion too because I think it would be

better without them.

I also made sweat potato fries, baked with olive oil and rosemary. I also

had mashed potatoes, herb gravy by roads end, pomegranate cranberry sauce

and pumpkin spice soy nog.

 

Can't think of anything else at the moment, but if I come up with anything

else, I will post it.

That's my recipe! I combined several recipes and came up with this.

 

I make various stuffings for it - sometimes 2 different types in the

one " Turkey " . I also use an extra packet of tofu and adjust the

seasonings accordingly. This gives a thicker layer of " turkey " . (One

day I'll get around to rewriting the recipe). Make sure the tofu you

use is very firm or hard tofu. You can make this the day before and

give it the final baking on the day.

I serve it up with cashew gravy and cranberry sauce. Last year I also

How about some grilled portobella mushrooms, steamed greens, roasted root

veggies, perhaps a brown rice dish and some gravy on the side?
