Guest guest Posted December 13, 2008 Report Share Posted December 13, 2008 Here's a nut roast recipe our family enjoys. It's from my husband's great-aunts recipe box. If it seems too dry, add more milk alternative (although it should be fine as written). LaDonna Aunt Jo's Peanut Butter Loaf Source: Aunt Jo 1 cup cornmeal 1 cup ground tortilla chips (-OR- 3 cups whole tortilla chips) 1 1/2 cups water 1 1/2 cups peanut butter 1 large onion, chopped 1 tsp onion salt 1 cup milk alternative 1 cup tomato sauce (see Note) 3 egg substitutes (tofu; flax seed gel; or Ener-G) 1 tsp sage Mix all ingredients together well. Place in a prepared casserole dish or loaf pan. Bake at 350 F (175 C) until toothpick inserted in center comes out clean. Slice and serve with tomato or cashew gravy. I have tried loaf pans, flat pans, less liquid, longer cooking time and they are always mushy. Guest guest Posted December 15, 2008 Report Share Posted December 15, 2008 That's funny - we just watched a new version of " The Christmas Carol " and when Scrooge say's he'll get his nephew a big turkey, nephew points out " but we're vegetarian " and he promises them a nut roast instead. Hubby asked me what a nut roast was and wanted me to make one! We'll have to adjust this one, as corn is out for us.
