Guest guest Posted January 2, 2009 Report Share Posted January 2, 2009 Trio of Melon Balls in Ginger Syrup 1/2 cup sugar 1/2 cup fresh orange juice 5 cm (2 " ) piece orange peel 3 cm (1 1/4 " ) piece fresh ginger, peeled, cut into matchsticks 1/4 seedless watermelon 1/2 honeydew melon 1/2 rockmelon (cantaloupe) 8 teaspoons small mint leaves 1. Combine sugar, juice, peel and ginger in a small saucepan. Cook and stir over moderate heat until sugar dissolves. Bring to the boil. Reduce heat to low; simmer, uncovered, for 5 to 7 minutes or until thickened slightly. Let cool slightly. 2. Meanwhile, using a melon baller, scoop balls of watermelon, honeydew and rockmelon (cantaloupe) into a large bowl. 3. Drizzle cooled ginger syrup over melon balls; stir to combine. Cover with plastic food wrap and chill for 1 hour or until ready to serve. 4. Spoon fruit and syrup into serving dishes; top with mint. BUDGET TIP: Use any leftover syrup with sliced oranges.
