Guest guest Posted January 12, 2009 Report Share Posted January 12, 2009 I read on the internet that Uncle Ben's Rice is Gluten Free. Does anyone know for certain here? It's been 3 hours since supper and not a trace of a headache! My energy level is extremely high! I have had a total of 3 cups of coffee and 6 glasses of water today too;) Hopefully the headaches are due to caffeine. I really want to make my new vegan diet last the rest of my life. I spoke to my sister in law tonight since she's an RN. She said to find out from my vegan groups how to get more protein in my diet quickly or I'll have another MS episode and be in the hospital again! Thank you all so much for your help with me! Cabbage and green peppers give a lot of people really painful gas and indigestion. Broccoli bothers some people too. So if you experience those symptoms you may want to cut back on those. Other than that it sounds like your being creative and adventurous in the kitchen! Keep experimenting and have fun with it! Cheers! Deborah This is the supper I made tonight. 1 cup of brown rice 1 drained can of kidney beans 1 handful of chopped cabbbage 1 rossette with stem broccoli 1 carrot 1 stalk scallion 1/4 of a red pepper 1/4 of a green pepper 2 tablespoons Red wine vinegar 1 teaspoon garlic powder 3 tablespoons Emmeril's Essence Salt and Pepper to taste I boiled 1 cup of water and the kidney beans once boiling hard added rice and a lid on low. Added the rest to a hot skillet then added the pan of rice and beans. Fried for about 10 minutes till water was gone and served on a plate. Made this recipe up my myself and it tastes wonderful. I now use Uncle Ben's from the bag and cook it up as I need it. No Problems.
