Crock pot challenge

O.K, now that I've experimented with lots of veggie loaves (and found

two I like) it's time for something different. I've had a crock pot for

probably 15 years. Never once have I used it in the traditional way--

throw meal ingredients in in the morning, enjoy a hot tasty dinner

eight hours later. That changes, starting tomorrow morning. I'm

starting with vegan ratatoiulle (spelling does not look quite right on

that). I have everything chopped and ready to layer in the morning.

I have two other slow cooker recipes on deck. One is a bean and veggie

ragout, the other a sweet potato and red bean stew. All the recipes

came from recipezaar. Any experienced slow cookers here?

I use my crockpot at least twice a week. I either make a huge pot of beans, or a

soup. For the soup, I don't chop anything, not only because it's much easier to

just throw things in whole, but because the soup ends up tasting better that

way. I add whatever I have on hand -- uncooked beans; potatoes or sweet

potatoes; dulse, kelp, or some other seaweed; lots of garlic and/or onions or

leeks; daikon root and/or celery root and/or parsnips and greens, when they are

abundant in the summer. I cook it for at least ten hrs. on low, almost always

overnight.

So do the vegetables basically fall apart because they're cooked for

so long - is that why you don't need to chop them? Sounds good to me!

Not that I have a crockpot, or space for one, but...

I enjoy doing chilli with veggies and beans that we often eat like spaghetti

sauce over gf noodles. Also, split pea soup, both of which are better cooked in

the crockpot than in a pot on the stove. The slow, low heat does seem to

preserve or maybe nurture a certain rich, mellow flavour.

Yes, usually they do fall apart, and everything is soft and delicious.

Dear Nicole,

Who is the author of your Vegetarian Slow-Cooker Cookbook?  I  know what you

mean about using your slow cooker.  I use mine all the time.  Right now I have

potato soup bubbling happily away.  I put it on last night on low.

All the recipes are vegan. Some contain gluten (in the form of seitan,

especially), and some contain soy (which I can't eat), but many are just

based on beans and veggies. I've found the cookbook useful. Nearly every

recipe I've tried from it has been really tasty. If you can't eat

nightshades, I wouldn't get it, though, as many of the recipes include

tomatoes.

Hi Patti,

Robin Robertson is the author. Sally posted the link to the book on amazon,

and this is the same book I purchased at Barnes & Noble some time back.

Sweet Potato, Chickpea and Spinach Curry

 

2T oil

1 large onion cubed

2-4t curry pdr

2t gr cumin

3 cloves garlic, chpd

3 bay leaves

2t garam masala

400-500g sweet potato or pumpkin

2t grated fresh ginger

2 cans chickpeas, drained

1 can tomatoes in juice

1/2c veg stock

1t salt

large bunch spinach leaves

fresh coriander

Saute onion, ginger, curry pdr, gr cumin, garlic in oil until onion

transparent then transfer to crockpot. Add sliced sweet potato or

pumpkin, bayleaves, chickpeas, tomatoes and stock, cook on low 8

hours or until vegetables are soft then add garam masala and salt,

add spinach and cook few mins until soft.

Garnish with coriander.

The author also put a few great slow cooker recipes in a later book

Quick-Fix Vegetarian. Everything has been easy and really good.

Here's the recipe with all the US conversions added as it appears in

the Files. It can be found in the mains folder under Stews and

Casseroles > Beans and in the Crockpot folder under Beans.

 

If your looking for Crockpot/slow cooker recipes, don't forget all the

great recipes we have in our very own files here.

 

 

Sweet Potato, Chickpea and Spinach Curry

 

2 Tbsp (30 ml) oil

1 large onion cubed

2 to 4 tsp curry powder

2 tsp ground cumin

3 cloves garlic, chopped

3 bay leaves

2 tsp garam masala

400 to 500 g (14 to 17 1/2 oz) sweet potato -OR- pumpkin

2 tsp grated fresh ginger

2 cans chickpeas (garbanzo beans), drained

1 can tomatoes in juice

1/2 cup vegetable stock

1 tsp salt

large bunch spinach leaves

fresh coriander (cilantro)

 

1. Saute onion, ginger, curry powder, ground cumin and garlic in oil

until onion is transparent, then transfer to crockpot.

 

2. Add sliced sweet potato or pumpkin, bay leaves, chickpeas

(garbanzos), tomatoes and stock, cook on low for 8 hours or until

vegetables are soft.

 

3. Add garam masala and salt. Add spinach and cook few minutes until soft.

 

4. Garnish with coriander (cilantro).

There is another good cookbook for the slow cooker.  It is called " Fix it and

Forget it "   .  It is not vegan, but you can always " tweak " the recipes.  Patti
