Tasty Vegan Patties

Another made up recipe but a total success! I found Veggie Cheddar

Sliced cheese for Vegan's and am in love!

I didn't measure real accurately for this one.

 

1-15oz can Garbonzo Beans drained

1/2 cup brown rice uncooked

3-cloves of garlic chopped fine

1/4-yellow onion choppped fine

1-large flowerette with stem of Brocoli chopped fine

1-carrot chopped fine

1/4-cup fresh cilantro leaves chopped fine

3-tablespoons soy sauce

3-tablespoons sunflower oil

1/4-cup Soy Milk w/vanilla (fortified with calcium and vit. D kind)

 

Put oil in a skillet add all vegetables, ric, cilantro and garlic and

let heat up slowly on low until they are starting to soften. While

that's cooking I took the beans and mashed in a plastic bowl with a

meat cleaver. Add soy sauce and milk to beans to the consistancy of

extremely thick mashed potatoes. Don't drain the vegetable mixture

and add to the bean mixture. Mixed with a fork and made patties.

Fryed on each side in a teaspoon of oil for about 3-4 minutes on each

side until golden brown.

Served on rippled green lettuce and spinach leaves with vegan cheddar

cheese melted on each patty and slices of tomato.

 

Don't melt cheese on patties that won't be used immediately. It made

5 patties for me. I fried all 5 and put 3 in refrigerator without

cheese to use for quick meals this week.

I have called this one " Michelle's Cheesy Patties " .

 

They can be found in the Mains folder in Burgers etc. > Bean.
