I like to use ground flax as an egg replacer. It's my 41st B'day and I wanna treat my friends to a rich yummy cake. I need it in Imperial measurements if you can ie; cups, tsp, Tbsp. You all rock! I always add a teaspoon or two of guar or xanthan gum to help it stick together. I also successfully substituted beet puree for all of the oil yesterday. There was no noticeable difference in the texture and very little difference in the taste. We get beets in our organic produce box and I needed to use them up. Since we won't eat them otherwise, into the chocolate cake they go! I've done the same with zucchini puree. I love this crazy cake recipe. EAT THE WHOLE CAKE CAKE From Mary Williams ¾ cup sweet rice flour (sorghum flour) ¾ cup white rice flour ¾ cup sugar ½ cup cocoa powder ¾ tsp salt 1 TBS baking powder 1/3 cup oil 1 cup water 1 TBS vanilla Pre-heat oven to 350 F degrees. Mix wet and dry ingredient together until smooth. Pour into prepared pan. Bake 20-25 minutes. Guest guest Posted January 17, 2009 Report Share Posted January 17, 2009 I've made this recipe with both Bob's All-purpose GF mix (which is a garbanzo flour mix, I think) and a homemade mix from Gluten Free Cooking School that contains rice flour, cornstarch, soy flour, and masa. Both worked equally well. I would think you could use any GF flour mix you usually prefer and that works with your particular food requirements. Guest guest Posted January 17, 2009 Report Share Posted January 17, 2009 Cut the greens off and wash them. Leave the skins and root on to minimize the red juice getting all over your kitchen. Boil them in water until tender (mine usually take about 30+ minutes). Once they're cool enough to touch, you can peel the skins and root right off. Stick them in a food processor with a blade and process. I usually add some cool water to help it get to a nice puree texture. I think I did four beets and added maybe 1/4 to 1/2 cup of water the other day.
