He's not a seasoned GF baker so nothing fancy, just a white or chocolate cake. I have had ZERO success with cake mixes such as Nam-nast-e (please don't spend time defending them here because if you can use eggs they are probably wonderful but I can't, and replacers didn't work well with those mixes). I have a cup-for-cup flour sub, but the recipe needs to be free of these allergens: NO: wheat/gluten milk/dairy soy nuts legume/bean flour eggs Any ideas or suggestions for a good gluten free, vegan, soy-free cake that you have tried and actually enjoyed? CRAZY CAKE 3 c. gf flour 2 c. sugar 2 tsp. soda 1/3 c. cocoa 1/2 tsp. salt Mix dry ingredients then add: 1 tsp. vanilla 2 TBLSP. vinegar 3/4 c. oil 2 c. cold water mix and bake in a 9X13 cake pan at 350 degrees for 30 minutes. It's so great to be able to relax on your birthday and let other people do the work. Karina posted a Mexican chocolate cake on her blog---it's free of all the things you're avoiding. I made it for our holiday celebration with my husband's parents, adding orange zest to the mix and serving it with an orange sauce (just orange juice and sugar, reduced, with a bit of arrowroot whisked in at the end to thicken it), and it was fabulous. (We've eaten the leftovers with Luna & Larry's Coconut Bliss cappuccino coconut milk ice cream, and that's been fabulous, too.) Sweetie Cakes Co. also makes vegan, gluten-free cake mixes free of your restricted foods. They aren't cheap, but they're superbly easy. I always used to bake a chocolate nut torte but it has eggs. I have not successfully made the switch to vegan gf baking. You could probably sub a fruit puree (apple, pear, etc) in place of the sugar and come out with a nice, moist cake. EAT THE WHOLE CAKE CAKE From Mary Williams ¾ cup sweet rice flour (sorghum flour) ¾ cup white rice flour ¾ cup sugar ½ cup cocoa powder ¾ tsp salt 1 TBS baking powder 1/3 cup oil 1 cup water 1 TBS vanilla Pre-heat oven to 350 F degrees. Mix wet and dry ingredient together until smooth. Pour into prepared pan. Bake 20-25 minutes. Guest guest Posted January 19, 2009 Report Share Posted January 19, 2009 I tried that namnaste brand once and it came out horrible! I was mad because that wasn't a cheap mix either! I have been experimenting with the baby squash in place of eggs that someone mentioned a week or so back. I just made brownies that came out great! I also noticed a while back that all the bakery's offering gluten free baked goods make small loafs, cakes and muffins. Every time I've split batter into mini bunts or cupcakes they came out great. Every large cake attempt has failed! I think small is the way to go, especially with no eggs as well! I also put applesauce into my cakes as it seems to help the moisture content. You could look up The Sweet Truth which is a show on veria that makes gluten/wheat free and sugar free treats. She uses eggs and dairy in some stuff, but it's easy to sub a lot of her recipes. She uses stevia in a lot of stuff, which I can't use. I will sub either raw sugar or agave for the stevia. Eggs I usually use applesauce (1/4 cup per egg) in baked goods, but I'm starting to experiment with the baby squash. Also half a banana, or any egg sub. If it calls for more than 3 eggs, I will use half Ener-G egg replacer and half applesauce for the eggs. I like the hemp truffles she makes. Cake wise I typically only make pumpkin or banana bread/cake. The pumpkin is really good and more cake like and not too complicated. If your interested I'll dig out the recipe. I actually have a pan that makes little pumpkin shaped cakes and they come out perfect! I imagine a loaf pan would work as well, but I wouldn't try anything larger than that! Guest guest Posted January 19, 2009 Report Share Posted January 19, 2009 Milk Options - Hemp, and Rice milk Egg Replacers - Flax Seed Meal, Bicarb/Baking Soda, Baking Powder Flour Replacer - Coconut, Sorghum and Rice perhaps Oil Replacers - Mashed Banana, Apple Sauce or Pureed Vegetables such as Squash, Zucchini or Pumpkin (canned is great) Vegan GF Chocolate Cake Dry Ingredients: 1C White Rice Flour ½ C Sourghum Flour 1 C Buck Wheat Flour 1 C Sugar 1 T Baking Soda ½ C Cocoa Powder 1 tsp Guar Gum 1 tsp Xuathum Gum ½ tsp. Salt Wet Ingredients: 1 ½ C Cold Water ½ C Apple Sauce ¼ C Oil ¼ C Brewed Coffee 1 T Lemon Juice or Cider Vinegar 1 Flax Egg (1T Flax Meal + 2 T Water) 1 tsp. Vanilla Essence Method: Preheat oven to at 350 degrees. Whisk together dry ingredients, then in a separate bowl mix together all the wet. Add the wet into the dry and mix until just barely combined. Do not over mix. Pour the batter into a greased and floured “9x13” cake pan, you can use parchment if you desire to line the pan. Bake the cake on the middle rack for 30 minutes or until the stick comes out almost dry. Let the cake cool completely before removing it from the tin. I love her recipes but am on hiatus from her blog because I find all of the political commentary in her posts over the last few months annoying. I get enough politics at home, I don't want it in my recipes! I don't have a processor but would it work in the KitchenAid? DH is definitely a keeper.
