Trader Joe's GF brownie mix

I made a batch of Trader Joe's gf brownies & used Ener-g egg

replacer. I followed all the instructions, but they came out very

oily. Has anyone had this problem, or know where I might have gone wrong?

I had the same problem. Except mine were rock-like and very oily. I think

it's just a bad mix.

I usually add applesauce for half the oil, XG, more egg replacer and baking soda

and sometimes flour to make them come out better

Try using puree veggies like squash or sweet pototo in place of the

commercial egg replacer. I use 1/4th cup per egg being replaced.

Commercial replacers are usually just baking powder and a starch.

 

If you sub the egg with a veggie puree, you can also reduce the fat by 1/2.

Yeah, they take so much doctoring that the mix isn't worth buying, in my

opinion.
