Guest guest Posted January 24, 2009 Report Share Posted January 24, 2009 Veggie ala King (Gluten Free) 1 medium onion (chopped) 1 green pepper (chopped) 1 cup green peas 1 cup chopped carrot 2 cups sliced mushrooms 2 cups soymilk, 1/4 cup nutritional yeast. 1/4 cup Arrowroot 1 tsp garlic powder 1/4 tsp black or 1/8 t white pepper 1/2 stick of Vegan Margarine (optional) (about 4T) Salt to Taste Minced Fresh Chives or Green Onions to garnish 1 Steam all vegetables ro 10 to 12 minutes. Remove Vegetables from water, retain steaming water 2 Whisk together the soymilk, garlic powder, pepper, and nutritional yeast 3 Heat the Soymilk mixture, and bring to a low boil, then reduce to a simmer. 4 If using vegan margarine, add at this point. 5 Add 1 cup of the steaming water into the mixture. 6 Mix arrowroot with one cup of water. and add to simmering mixture. 7 Mixture should thicken to a soup like consistency, if too thick add a little more of the steaming water into it. 8 Fold the vegetables and TVP into the mixture. 9 Salt to taste 10 Serve over rice, biscuits or toast 11 Sprinkle with fresh garlic chives or green onions Quote Link to comment Share on other sites More sharing options...

Is the arrowroot added to the cup of water and then to the mixture or are we using 2 separate cups of water here? Also, you mention TVP in the cooking steps but not in the ingredient list! ??? Thanks for the recipe! I've been trying to figure out how to make something like this for a while! Notes: I imagine tofu, gf vegan chicken product, or big chunks of eggplant, zucchini or something similar would work in place of TVP. (More veggies for soy allergic and maybe some beans to up protein.) I use red, orange or yellow peppers but never green peppers as the green tend to give indigestion and gas and I personally don't care for the taste. I find most people aren't too fond of them! I'd also use rice milk because I like the taste better. Any milk alternative works! For arrowroot, cornstarch can be used if you can't find arrowroot. If your allergic to corn, read labels as arrowroot is often mixed with cornstarch to cut cost.
