I don't have any specific recipes, but here's a sampling of what I served to give you a starting off point. Warning these are NOT healthy. --Vegetarian chili w/ tofu sour cream on side (basically a variety of beans and fire roasted tomatoes and spices and really anything you want to throw in) --baked Sweet Potato fries with Brown sugar and tobasco sauce sprinkled on top--trust me the combination works (I've had them in restaurants as Orleans Fries) --Pasta salad (with your choice of gf penne pasta) tossed with grilled veggies, herbs and spices of choice some olive oil, vinegar and garlic --Chips with guacamole and salsa --cake and cookies from a mix that I decorated with team logo. Guest guest Posted January 30, 2009 Report Share Posted January 30, 2009 A few months ago, I used the 'cheese' sauce ingredients from Karina's vegan mac and cheese recipe to make a spinach-artichoke dip for a party. It was incredible with corn chips; my non-allergic friends ate up the whole pan. You can find her mac and cheese recipe here: http://glutenfreegoddess.blogspot.com/2008/02/best-vegan-baked-mac-cheese.html It works best to use frozen spinach, warm it to room temp, and squeeze all the moisture out. Otherwise the moisture of the spinach breaks down the 'cheese' sauce. Add four or five chopped artichoke hearts and sauteed onions, and there you go.
