Guest guest Posted February 1, 2009 Report Share Posted February 1, 2009 Layered Avocado Dip 2 ripe avocadoes 8 teaspoons lime juice 310 g (11 oz) corn kernels, drained 3/4 cup vegan sour cream 8 teaspoons taco seasoning 1 medium ripe tomato, finely chopped 8 teaspoons chopped fresh coriander (cilantro) salt and pepper, to taste corn chips, to serve 1. Using a fork, mash avocado and juice in a medium glass bowl until smooth. Season with salt and pepper. 2. Place corn in the base of four 1-cup glasses. 3. Spoon avocado mixture over corn; smooth surface. 4. Combine sour cream and taco seasoning; spread over avocado layer; smooth surface. 5. Cover with plastic food wrap. Chill for 1 hour. 6. Combine tomato and coriander (cilantro). Sprinkle tomato mixture over the sour cream mixture to cover. 7. Serve immediately with corn chips. Serves 4 - 6.
