Guest guest Posted February 2, 2009 Report Share Posted February 2, 2009 I bought a box of Gluten Free Chocolate Cake mix at the health food store. It says I need to mix veg oil into, which is fine. However can I make it was with diet coke or applesauce to make it a little healthier? I dont' know if diet coke or applesauce is gluten free and or if it would even work. Guest guest Posted February 2, 2009 Report Share Posted February 2, 2009 I wouldn't recommend cooking with Diet Coke just because I wouldn't recommend drinking Diet Coke. I used to be nearly addicted to that stuff, and it was soooo bad for my body. (To each her own, but I really don't think it would work as a fat sub.) The applesauce, you can probably sub in for at least 1/3 to 1/2 of the fat with no problem. (In fact, it might make it more moist than the fat!) Both applesauce and diet coke are diet free, but diet coke is made with artificial sweeteners which are not good for our brain or GI tract. Guest guest Posted February 3, 2009 Report Share Posted February 3, 2009 Well the aspartame or splenda in diet coke is a neurotoxin, some I am not sure that's a good replacement. It's an individual choice. Applesauce can be used (as can pear sauce or apricots) to replace part of the fat but the body needs fats to function efficiently and most cakes are dependant, to some degree, on the function of fats surrounding proteins to make the lattice which makes cakes able to stand up to the rising effect of baking powder and steam. If the fats didn't seal the proteins, the lattice would collapse and we would have flat baked goods. Watching out for bad fats like trans fat is more important than minding good healthy fats which we need. Still cutting back by a 1/3 to 1/2 is not unreasonable. Vegetable oil is a fat, as all oils are, but they do have their place and purpose. Fat isn't bad, in and of itself. Only if you eat too much of it. If for some reason you need to be on a *very* low fat diet, then yeah, diet coke might be better. Though I can't see it working very well as a substitute. Applesauce would definitely be better. For *most* people, a good oil is much healthier than diet coke. Guest guest Posted February 4, 2009 Report Share Posted February 4, 2009 Aside from the fact that we should all kick our diet coke habits, when you heat aspartame it loses its ability to sweeten. I don't know what would happen to the flavor of the cake. That's why you can bake with splenda as a sugar substitute, but not aspartame (sorry, I'm not actually vegan - I'm here for my dairy and egg and used to be wheat allergic child - so I don't even know if splenda counts as vegan). It would add carbonation to make the cake rise. 2. It would add a little depth to the flavor. You could probably accomplish the same thing using carbonated water and a gluten free flavor extract like vanilla or even a little bit of instant coffee. Personally, I don't like applesauce in cake unless it is kind of a heavy cake to begin with. It is great in brownies, banana bread, spice cake, etc but it make a " birthday " cake to dense for me.
