Spinach Salad

 

 

60 g (2 oz) baby spinach leaves

1 ripe avocado, chopped

1 small red onion, thinly sliced

4 teaspoons light olive oil

8 teaspoons white wine vinegar

 

 

1. Combine spinach, avocado and onion in a medium bowl.

 

2. Whisk oil and vinegar; drizzle over salad. Gently toss to combine.

 

 

 

Serves 4.

Nutrition per serve: 649kJ (154 cal.); 16g fat (3g sat); 2g protein;

2g fibre.
