Last night, on a whim while I was decimating a Trader Joe's brownie mix, I added about 1/4 cup of Living Harvest organic raw hemp " nuts " (purchased at Whole Foods) to my Pamela's bread mix along with the egg replacer, oil and water. It came out beautifully - you can see it here <http://www.flickr.com/photos/amberdenise/3274715766/>. You will not believe how photogenic this bread is, and it tastes as good as it looks. Best bread ever! - gluten free, tree nut free, dairy free, soy free, egg free, peanut free. It tastes great not toasted for sandwiches and toasting it brings out the nutty flavor of the hemp seeds. It's always wonderful to have efforts rewarded with such success! It sounds delicious! I haven't tried the Pamela's bread mix --- I know that most of the Pamela's mixes are not vegan, so I guess I just assumed the bread one wasn't either. Hahahahaha! photogenic bread! what a hoot. But, yes, it certainly is. I love Pamela's products and use them all the time, although I have not tried the bread mix. Guest guest Posted February 15, 2009 Report Share Posted February 15, 2009 So, I tried the Pamela's-plus-hemp-nuts bread recipe today and it does taste very wonderful, both plain and toasted. But mine didn't look like the picture. My breads always seem to collapse on cooling. I baked it the full 70 minutes; the top was quite brown. But as it sat in the pan for the prescribed 10 minutes it started collapsing. The slices look distressingly like a four-armed starfish. Good toast, but not much to fill for sandwiches! Suggestions? I'm thinking, lay a piece of foil on top to keep it from overbrowning and bake it longer?? Lower temperature, but longer? Maybe cool it slowly in the turned-off oven with the door open? My other breads have been doing the same thing lately, so it's a pattern..... Maybe I'll just bake them as rolls or hamburger buns next time. Thanks for ideas on this. The loaves of bread look so good coming out of the oven, but then they sink in the middle. One thing I thought of is that my oven does not have a good thermostat (I live fulltime in an RV) so it was not getting as hot as I thought it was. I bought an oven thermometer and found out that when I set the temp on 400, the oven was only actually cooking at 350. That could be part of the problem, but I have not baked any bread since I got the thermometer so can't say for sure. Guest guest Posted February 15, 2009 Report Share Posted February 15, 2009 Internal temperature of a loaf of GF bread should be 180 before it is removed from the oven. If your oven isn't cooking properly, the outside of the bread rises and sets before the internal structure and gf flours are not able to build the lattice necessary to hold up the weight of the crust. Cover with foil for all but the last 10 - 15 minutes of baking (if you want a crispier crust). Also do not allow the bread to cool upright, try setting it on either side. Gluten, when baked forms a lattice structure similar to a fish net. When we try to replicate that with non-gf flours, we need to be sure the bread has enough protein to be strong.
