Be sure to purchase the Red Star Nutritional Yeat cookbook. It tells you how to make a variety of " cheezes " . I used the recipes as a base to sauces. Of course my taste are a bit different, so I tend to modify almost all recipes. I promise I will soon post some recipes! I have a vegan fudge brownie recipe my husband's co-workers love and a cinnamon roll recipe everybody loves. I accidently slipped and had a veggie burger at a great veggie cafe that I forgot to order vegan, and whoa...my joints swelled big time! SO, I think my email was politely deleted. I think part of the reason they changed was because the Mexican flavor was made with brazil nuts. I don't know, I just wish they'd bring it back so I could have a good cheese substitute to use! I have tried the new Vegan Rella and Soymage and Chreese and nutritional yeast and none of it satisfies my craving! (I'd rather go without!) Anyone else have any similar experiences? My 3 y/o son is allergic to dairy and the rice and almond substitutes all have the milk proteins in them. I found the Vegan Gourmet brand, but it contains soy and carageenan (which I'd like to avoid when I can), but the taste is somewhat satisfying when melted only. There is this book that I got called 'The Ultimate Cheeseless Cookbook'. You can look it up on Amazon. I've tried a couple of the recipes, but have had to play with them a bit b/c the taste can't be compared for a cheese lover...however, my son doesn't know the difference. They have recipes to make your own 'block' cheeses. Azure Standard sells a lot of different types of non-dairy cheeses. I love the almond mozzerella. You can't tell it from the real thing. The chedar is really good, too. I have lapsed in and out of following a true vegetarian diet over the years. I have recently decided to become a vegan and overall, I am liking it. However, I am wondering if anyone has any ideas for a good cheese substitute? I think that is the thing I am going to miss most. I have some experience already with gluten-free foods, because my daughter was recently found to be sensitive to gluten, although I do not know if she actually has celiac's or not. I recently made Ashley Skabar's Aboutcom Dairyfree Cooking yoghurt cheese recipe that seemed to satisfy the cheese craving. It is a ricotta style cheese that I used on crackers with pesto on top and this was yummy. It has the mouthfeel of cheese. It has soy yoghurt and light miso as the ingredients. I also like Vegan Parmesan cheese in a purple shake can (refrigerated). Tofutti cream cheese, and also sour cream, are good for recipes. I make a hot spinach artichoke dip that has even fooled some serious cheese lovers! 1 container of the cream cheese softened, 1 block of the FYH mozzarella style cheese shredded, about 1/4 cup of the parmesan (I just eyeball it), about 1 TBLS each dried basil, garlic powder, sea salt, pepper. 1 box frozen spinach, thawed. 1 can artichoke hearts drained and cut if you can't get the quarted oned. Mix everything together, put into casserol dish and bake 425 for about 20 minutes or until the cheese melts. Optionally, you can add a couple TBLS of the sour cream to it or else safe mayo. I always forget it and it turns out fine so I just crossed it off my recipe! I eat this with corn tortilla chips although I recently had the idea of making a pizza crust (I use Gluten Free Naturals mix) and baking it until it was nice and crispy then cut it up into pita chips. I have also used Mrs. Dash Tomato Basil spice in place of the herbs and that worked out pretty well too! Another good cheese is Roads End chreese mix. I also came up with chreeseburger mac the other day. I get the ground beef style meat analog from Spice-Of-Life. You can use any pasta you like. It takes some work because you have to rehydrate the " meat " and make the sauce and the pasta. Make the sauce when the pasta and meat are ready as it only lakes a few minutes. Add a little extra liquid so the cheese isn't too thick and then toss it all together! I've also made the chreese sauce and added salsa to it to make a nice cheese dip.
