Cheese Substitutes

I use healthy-eating.com for the majority of my on-line ordering. Great site

and the people are great also. Be sure to purchase the Red Star Nutritional

Yeat cookbook. It tells you how to make a variety of " cheezes " . I used the

recipes as a base to sauces. Of course my taste are a bit different, so I tend

to modify almost all recipes. I promise I will soon post some recipes! I have

a vegan fudge brownie recipe my husband's co-workers love and a cinnamon roll

recipe everybody loves. My son is vegan so all my recipes will be vegan.

I usually don't make deserts, but I made a great cheese cake out of

tofu....it is incredible the vegetarian recipes on the net...use

them three times a week....

I've had similar experiences too, and I've just gotten to the point of going

without too, and after a while, the craving goes away. I accidently slipped and

had a veggie burger at a great veggie cafe that I forgot to order vegan, and

whoa...my joints swelled big time! Once your body gets used to it without, when

you do slip and get into your diet, watchout!

I would also use cheese substitutes, but I haven't found one I like.

I used to eat VeganRella, the Mexican flavor and LOVED it, but they

changed the recipe and turned it into " cheddar " flavor and it is just

not very good. I tried writing this to them through their website

(to BRING BACK THE MEXICAN FLAVOR!), but got an automated response

back from them with a bunch of recipes using the cheddar " cheese " !

SO, I think my email was politely deleted. I think part of the

reason they changed was because the Mexican flavor was made with

brazil nuts. I don't know, I just wish they'd bring it back so I

could have a good cheese substitute to use! I have tried the new

Vegan Rella and Soymage and Chreese and nutritional yeast and none of

it satisfies my craving! (I'd rather go without!) Anyone else have

any similar experiences?

I was raised to be a meat-eater. That is simply how most people in the U.S.

eat. When I was growing up, I don't think I probably ate quite as much meat as

some people. A year or so ago, I read a book called The China Study. The book

made a great case for why we should not consume meat or dairy, including all of

the diseases that it leads to. It was very convincing and I decided that I would

give up meat and dairy. Once I stopped eating meat, I didn't crave it at all.

Now that it has been about 15 months, I don't even like the smell of meat

cooking. I eat fruit, veggies and whole grains. Occasionally, I will eat

something that contains eggs or milk, but that's usually at a social gathering

and I do it to be polite and participate. Feel free to ask me more questions if

you like.

I don't have the brand name right now but I had to buy these for my Mom because

she was allergic to soy and being a vegan this was her alternative.

I would get them at Whole Foods

Hi I am new to the group. I wish there was a perfect non-dairy cheese!

My 3 y/o son is allergic to dairy and the rice and almond substitutes

all have the milk proteins in them. I found the Vegan Gourmet brand,

but it contains soy and carageenan (which I'd like to avoid when I

can), but the taste is somewhat satisfying when melted only.

 

There is this book that I got called 'The Ultimate Cheeseless

Cookbook'. You can look it up on Amazon. I've tried a couple of the

recipes, but have had to play with them a bit b/c the taste can't be

compared for a cheese lover...however, my son doesn't know the

difference. They have recipes to make your own 'block' cheeses. They

do contain Tahini, so if you're allergic to nuts/seeds, then I'm not

sure how it will turn out.

I get them from the local Safeway and Fred Meyer, but depending on where you

are, you can easily get them from a variety of mail orders. Azure Standard

sells a lot of different types of non-dairy cheeses. I love the almond

mozzerella. You can't tell it from the real thing. The chedar is really good,

too. It melts just like mild base chedar.

Hello!

 

My name is Jill and I have recently joined the list. I first became a

vegetarian when I was 18. I am now 54. I have lapsed in and out of

following a true vegetarian diet over the years. I have recently

decided to become a vegan and overall, I am liking it. However, I am

wondering if anyone has any ideas for a good cheese substitute? I think

that is the thing I am going to miss most. I have some experience

already with gluten-free foods, because my daughter was recently found

to be sensitive to gluten, although I do not know if she actually has

celiac's or not. But.....substitute cheese, please, anyone?? Even if

just for the occasional use.

Welcome to the group. One of my favourite mock cheeses is called

Cracker-barrel style and you can find the recipe here, among several

other myo cheese subs:

for unflavoured gelatin I use agar agar, but you could use any vegan gelatin.

 

This comes out more like velveeta than cracker barrel, but it's great

-Hi - good cheese subs are quite difficult to find.

I recently made Ashley Skabar's Aboutcom Dairyfree Cooking yoghurt

cheese recipe that seemed to satisfy the cheese craving. It is a

ricotta style cheese that I used on crackers with pesto on top and

this was yummy. It has the mouthfeel of cheese. It has soy yoghurt

and light miso as the ingredients. Takes 3 days to make but worth

it in my opinion.

Brenda-Lee, that cheese sub sounds great! I particularly appreciate that

it's solid nutritionally and without soy. I'm going to make it this week.

Miso is fermented soy. Big difference for many. The only soy I'll eat

is fermented.

I recently found out that there are soy-free misos as well, such as

chickpea or adzuki. South Country is one brand.

Yes miso is soy but it's a bit denatured (for lack of a better word)

through fermenting and can be tolerated sometimes if I am careful.

The soy yoghurt is a different thing altogether though.

If your fine with soy, Follow your Heart brand makes some really good

cheeses. I also like Vegan Parmesan cheese in a purple shake can

(refrigerated). Tofutti cream cheese, and also sour cream, are good for

recipes. I make a hot spinach artichoke dip that has even fooled some

serious cheese lovers!

1 container of the cream cheese softened, 1 block of the FYH mozzarella

style cheese shredded, about 1/4 cup of the parmesan (I just eyeball it),

about 1 TBLS each dried basil, garlic powder, sea salt, pepper. 1 box frozen

spinach, thawed. 1 can artichoke hearts drained and cut if you can't get the

quarted oned. Mix everything together, put into casserol dish and bake 425

for about 20 minutes or until the cheese melts. Optionally, you can add a

couple TBLS of the sour cream to it or else safe mayo. I always forget it

and it turns out fine so I just crossed it off my recipe!

I eat this with corn tortilla chips although I recently had the idea of

making a pizza crust (I use Gluten Free Naturals mix) and baking it until it

was nice and crispy then cut it up into pita chips. I have also used Mrs.

Dash Tomato Basil spice in place of the herbs and that worked out pretty

well too!

 

Another good cheese is Roads End chreese mix. I also came up with

chreeseburger mac the other day. I get the ground beef style meat analog

from Spice-Of-Life. You can use any pasta you like. It takes some work

because you have to rehydrate the " meat " and make the sauce and the pasta.

Make the sauce when the pasta and meat are ready as it only lakes a few

minutes. Add a little extra liquid so the cheese isn't too thick and then

toss it all together!

I've also made the chreese sauce and added salsa to it to make a nice cheese

*They have other styles too but I think the beef style is the best tasting

For this cheese you need the white miso. You could try chickpea etc

but not sure how these would work.
