Cheese Substitutes

If it is the taste of parmesan you want, try to find Parma. It is made

from ground walnuts, nutritional yeast, and sea salt. Nothing more.

I've disliked the other vegan parmesans I've tried, but this one is

good.

Unfortunately the store where I've bought it has been out-of-stock for

some time. I asked someone in the store to look into this and get back

to me -- that was last Saturday.

I guess I either have to order some online or find a good recipe (I'm

sure someone has tried to recreate this)

The recipe for the mock cracker barrel cheese sounds great....do you

know if there is a way to sub in for the cashews??? We are also nut

free...so many things call for nuts....so makes things really

difficult sometimes....so would love to know a good subsitute.

thanks

Ronni, if you can tolerate seeds, maybe raw sunflower seeds or pumpkin seeds

would work? It'd be worth a try, anyway.

For this cheese you need the white miso. You could try chickpea etc

but not sure how these would work.

I agree with what someone else said... the Follow Your Heart brand

is good - I've only tried a couple flavors, but it melts decently in

the microwave and tastes good plain even. It's a soy thing, though,

so that doesn't work for everyone. Oh, and I haven't eaten real

cheese in more than a decade...so I'm not sure it actually tastes

like cheese at all - but it's good.

I get Miso Master organic chickpea miso (soy-free) at Whole Foods; in my

store, it's kept in the same refrigerated section as the vegetarian meat

analogs.
