Guest guest Posted November 11, 2002 Report Share Posted November 11, 2002 I have used those mixes...they are pretty good..however, I always love to add my little bit of good olive oil..I add 3tbs to the mix...and I let the mix sit for awhile..maybe a few hours...in the fridge...it helps it taste better...I also on occasion add some chopped sun dried tomatoes..or sweet roasted bell pepper (from a jar packed in oil)...just to jazz it up a little..the mi is a wonderful base if you are in a hurry or just don't wanna make it by hand...you can add some olives...even more lemon juice and dill...extra garlic....there are several ways to do it...but when all else fails, plain (with the olive oil) and fresh ground black peppercorns will do just fine. I never measure... sorry... just get the texture you want, as a dip or a spread, with the following ingredients thrown into a food processor: cooked garbanzo beans (or black beans, or canellini, or...) soy mayonnaise (Nayonaisse is the *best*) salt (if you're not using canned beans) pepper cumin curry garlic onions My kids love this! Whoa, if you are making it yourself, you control how much goes into it. Why not just cut the amount of spices in the recipe you have? Personally, I tend to double and triple any amount of spices in any North American recipe, sight unseen, but that's just me 8-). BTW, neither of my kids will touch hummus, of any kind, and we have both nut-free school and nut-free daycare. My local store that has a bulk bin natural foods section also carries the hummus powder mix in bulk. It is very convenient for my son to mix up fresh fast hummus dip for after school. I like adding hot sauce and a blop of salsa in mine. I shoulda looked but now I'm in a rush :=( You want one that uses a good amount of tahini as well as garlic and chickpeas - and of course olive oil and lemon juice and cummin and . . . . I think the homemade is nicer cuz then you can adjust the ingredients to be exactly as you prefer. It freezes well, as you know. The northern beans make it creamy and everyone at work thinks it's got sour cream in it..LOL Yes, red pepper make it a lovely color too, I agree Mel. I have to toss my cilantro in there. It's good, but I need to experiment and use added ingredients. Sadly, where I live my grocery store wouldn't even carry something as exotic as chickpeas. I go in with my husband to work one day a week so I can run errands and shop. This is where the Healthy Life Market is and a super Kroger with a very large organic/health food section. The other night I basically copied a sandwich I got at a vegetarian restaurant: Whole wheat bread slices (I got some at Panera) Hummus Cheese of your choice (I think the restaurant used cheddar and jack) Avocado slices or chunks Tomato (I use a large beef steak one from the garden) Grill on a panani grill Today we were going to make a pizza like this same restaurant does. My husband is very good with pizzas - makes his own crusts. We experiment a lot with pizzas. So, we were going to first use barbecue sauce on the crust (And, I have to check the ingredients of the barbecue sauce to make sure it's okay for vegetarian - I'm less than three months into this.), roasted red peppers, a couple of different cheeses, pineapple chunks and purple onion. I eat cheese and dairy, but no eggs. I have noticed recipes with eggs on here. I saw some egg substitute at the Healthy Life Market, but haven't tried it yet. Guest guest Posted February 22, 2009 Report Share Posted February 22, 2009 Hummus *Usually a real 'hit' with kids! 2 cans (16 ounces each) reduced-sodium garbanzos, rinsed and drained except for 1/4 cup liquid 1 tablespoon extra-virgin olive oil 1/4 cup lemon juice 2 garlic cloves, minced 1/4 teaspoon cracked black pepper (optional) 1/4 teaspoon paprika 3 tablespoons tahini (sesame paste) 2 tablespoons chopped Italian flat-leaf parsley In a blender or food processor, add the garbanzos. Process to puree. Combine the olive oil, lemon juice, garlic, pepper, paprika, tahini and parsley. Blend well. Add the reserved liquid, 1 tablespoon at a time until the mixture has the consistency of a thick spread. Serve immediately or cover and refrigerate until ready to serve. One advantage of tahini (sesame seeds) is the high calcium content, but of course it's possible to get that from other sources. I've made hummus without tahini before too --- because I forgot to add the ingredient! No one really knew the difference except me. I couldn't figure out why the depth of flavor was gone until I retraced my process. And yes, I usually leave out the olive oil. I don't think it's a necessary ingredient.
