Can someone give me an accurate description of what pimientos are.

I know they are something like a red pepper but I sometimes see them referred to

as a chilli - am confused. If they are like red pepper would you use raw peppers

or roasted.

What would be best as a substitute.

TIA

Best sub would be a roasted red pepper (sweet/bell/capsicum, depending

one what part of the world you live in!)

That's right --- and usually we buy them jarred/canned --- and diced.

Sometimes they are roasted first and sometimes not. Essentially they

are canned red sweet peppers.

Here's a link with a picture of them.

They are a heart shaped, thick skinned, sweet red capsicum/pepper. I have bought

them in Australia from an international delicatessen. They came in a can. They

weren't actually called pimientos (I can't recall what they were called), but

the lady in the shop knew exactly what I was asking for.

You can easily sub sweet roasted red peppers from a jar, but preferably not the

marinated kind unless the recipe can take the extra flavours.
