I know they are something like a red pepper but I sometimes see them referred to as a chilli - am confused. If they are like red pepper would you use raw peppers or roasted. Essentially they are canned red sweet peppers. I have bought them in Australia from an international delicatessen. They came in a can. They weren't actually called pimientos (I can't recall what they were called), but the lady in the shop knew exactly what I was asking for. You can easily sub sweet roasted red peppers from a jar, but preferably not the marinated kind unless the recipe can take the extra flavours.
