Basically it's a preservative, so if your planning on eating it all within a day or two, it's no big deal. I often forget or don't have lemon juice on hand when I make hummus and I never missed it! For soy sauce, if you have a worcestershire sauce that works, try it. Alternatively you can try mixing spicy brown mustard with a little molasses or liquid smoke and thin it out some with a little water to get the right consistency. Potato starch, use any starch that works for you. Make sure your arrowroot is true arrowroot as many are mixed with corn starch or are really corn starch, to cut cost. Potato flour is dense so you'd want to use something comparable. Are you able you have sweet potatoes? A bean flour should work well in it's place. That's all I got. In any recipe you see, you can sub arrowroot for corn starch, so don't let that control your choice. Generally speaking, you can also sub tapioca starch or sweet/glutinous rice flour for potato starch. > One more question. What subs well for lemon juice?
