For the hummus, just leave the lemon juice out. Basically it's a

preservative, so if your planning on eating it all within a day or two, it's

no big deal. I often forget or don't have lemon juice on hand when I make

hummus and I never missed it!

 

For soy sauce, if you have a worcestershire sauce that works, try it.

Alternatively you can try mixing spicy brown mustard with a little molasses

or liquid smoke and thin it out some with a little water to get the right

consistency.

 

Potato starch, use any starch that works for you. Make sure your arrowroot

is true arrowroot as many are mixed with corn starch or are really corn

starch, to cut cost.

 

Potato flour is dense so you'd want to use something comparable. Are you

able you have sweet potatoes? A bean flour should work well in it's place.

Here is a mock soy sauce, could probably be used for worcestershire sauce too:

 

Mock Soy Sauce

 

4 tablespoons [vegan] beef bouillon

4 teaspoons balsamic vinegar

2 teaspoons dark molasses

� teaspoon ground ginger

1 pinch each pepper & garlic powder

1� cups water

 

In a saucepan over medium heat, stir together the beef bouillon,

balsamic vinegar, molasses, ginger, white pepper, garlic powder and

water. Boil gently until liquid is reduced to about 1 cup, about 15

minutes.

Probably. In any recipe you see, you can sub arrowroot for corn

starch, so don't let that control your choice. Generally speaking,

you can also sub tapioca starch or sweet/glutinous rice flour for

potato starch.

There are 6 recipes in the files (

) for soy sauce

substitutes. Look in Condiments & Sauces - Savory and Sweet. > Sauces - Savory >

Soy Sauce Substitutes.

 

This one seems to be quite popular, but I haven't tried it myself.

 

Soy Free " Soy " Sauce

Source: GFCFRecipes list

 

8 oz (1 cup) molasses (treacle)

3 oz (90 ml) balsamic vinegar

sugar, to taste

 

 

There is also a soy free Worcestershire Sauce recipe in Condiments & Sauces -

Savory and Sweet. > Sauces - Savory > Worcestershire Sauce. It makes a huge

amount so you'll probably want to cut the recipe down.

 

Worcestershire Sauce

 

10 cups vinegar

60 g (2 oz) garlic, peeled and chopped

60 g (2 oz) whole cloves

30 g (1 oz) knob of ginger, sliced

4 onions sliced

1/2 tsp cayenne

2 1/2 cups treacle (molasses)

1/4 cup salt

 

1. Boil all together for 1/2 an hour then strain.

 

2. Bottle when cold.

We can do sweet potatoes. I'm hoping to find some sweet potato flour but

haven't yet.

I found sweet potato flour at my asian market. Haven't used it in anything yet.

Amazon.com has a couple different brands of sweet potato flour if you can't find

well you need to order your breads from anna , www.breadsfromanna.com their the

best, thats all i use and their great.

i got mine off of internet just put best gluten free z. bread  anna makes

pumpkin bread mix you just add puree

I looked at these but they have potato in them so they won't work for us.
