Using non-dairy yogurt for cooking?

I just started making my own coconut milk yogurt (yum!). I'm wondering if any

of you have experience using non-dairy yogurt for cooking with in place of sour

cream (like in a layered bean dip) or even if you can make 'yogurt cheese' out

of it to use in place of ricotta in something like (gf) lasagna?

 

We avoid soy (due to ds's reactions) so using a soy alternative is out for us,

but before trying this myself I just wanted to see if you all have any

experience w/ this??

Lauren,

 

Yes, I use coconut milk yogurt (store-bought) in place of other yogurt or

creme fraiche or sour cream in a variety of recipes where I think the

coconut-y taste won't detract from the overall dish. In some cases, it adds

a great element.

 

The store-bought kind is pretty sweet, but I'm guessing your homemade kind

has less sugar and would be even more versatile. :)

I've been using coconut yogurt in place of buttermilk in recipes. It works

really well as a sub in recipes. I imagine it will work equally well for

sour cream, though I haven't tried it yet!

Yay! And I *did* use it as a sour cream replacement on top of some gf burritos

and it was divine!! (If you like coconut!!)

Does anyone know of a recipe to make coconut milk kefir? I have a dear friend

who is dairy intolerant and really needs to drink kefir for her health.

Last time I checked, Body Ecology had one on their website and sold

the starter. They also have a recipe for young coconut water " cheese " .
