Cake mix question

My daughter's birthday is upon us and I would love to know if anyone has

used an amazingly delicious cake mix. I know many people posted recipes

from scratch, but if I can find a good mix i would prefer to go that route.

 

I will also need frosting recipes. I am happy to make the frosting from

scratch because the ingredients will probably be easier to find and use

before they expire.

 

She wants a white sheet cake with chocolate icing....yummy!

 

I hope someone has some suggestions.

My son used Kinnikinick (sp?)cake mix and used flax seed instead of eggs. For

the icing we used powdered sugar, margarine, soy milk and vanilla - just adapted

the regular buttercream frosting recipe from Betty Crocker.

 

It was a little chewy but really did taste like cake.

my experience with vanilla gf cakes is not good. chocolate does a

far better job of hiding hte funky taste of gf flours.

 

Bob's Redmill chocolate cake mix works well with egg replacer. I

like to spread Enjoy Life chocolate chips over the top of the cake as

soon as it comes out of the oven. As soon as they melt I spread them

over the cake and voila, a " frosted " cake.

 We've used Cherrybrook Kitchens products with great success. Cake mixes,

cupcakes, cookies, etc.

I sound like a skipping record on here when cake mixes come up ;), but I

really love the gluten-free, vegan, fair-trade, organic mixes from Sweetie

Cakes Co. They're expensive but delicious. My favorite is the chocolate.
