I was wondering if anyone had a recipe that was tried and true that you really really like. I can't decide which kind I'd like to make as I browse through recipes on the web. The recipe is not on her site. I actually first saw her make it on her Youtube page. But it's not there anymore. Raw vegan cream cheese 1 cup macadamia nuts soaked in purified water for a couple of hours and drained. (I used half almonds to cut down on cost) 3 TBS lemon juice 1/4 tsp onion powder 1/4 tsp salt 1/3 cup water 1. Add nuts to blender 2. Add lemon juice and seasonings. 3. Add water and blend until smooth. Refrigeration causes the cheese to solidify and the flavors to develop more fully. But it tastes wonderful fresh from the blender as well. Note: If you don't like the tan color of the cream cheese, you can use peeled, slivered almonds or all macadamias. Using only macadamia nuts will create a richer cheese. Not a bad thing! ha ha My husband has taken this to work and his very NON-vegan coworkers love it. I've made it with just almonds and it comes out just as tasty. If you like, I can send you a link to the video of Rhio making it. I have made it with cashews also, but that makes a thinner,less dense cheese. I did find some nut cheese recipes in the April 09 issue of Vegetarian Times. There's a cheddar flavor that is slice-able. I also came across this recipe on the Veg Times website. It's been replaced by The Ultimate Uncheese Cookbook, which I haven't read: http://www.amazon.com/Ultimate-Uncheese-Cookbook-Delicious-Dairy-Free/dp/1570671\ 516/ref=pd_bbs_sr_1?ie=UTF8 & s=books & qid=1241289868 & sr=8-1 Both books are probably pretty similar, I would imagine, and I found a lot of cheese type recipes that either are GF or could easily become GF. I've been eating low fat vegan for a few years now, and so I was especially happy to see so many good recipes without oil.
