Vegan Nut Cheese Recipes?

I want to try a raw vegan nut cheese recipe this weekend. I was wondering if

anyone had a recipe that was tried and true that you really really like. I can't

decide which kind I'd like to make as I browse through recipes on the web. I am

GF/CF/SF and I try to avoid nutritional yeast.

Thanks for your help!

Hi Carrie!

This is a recipe that I got online from Rhio.

http://www.rawfoodinfo.com/home/home_a.html

It's for a raw cream cheese. The recipe is not on her site. I actually first saw

her make it on her Youtube page.  But it's not there anymore.

Raw vegan cream cheese

1

cup macadamia nuts soaked in purified water for a couple of hours and drained.

(I

used half almonds to cut down on cost)

3 TBS lemon juice

1/4

tsp onion powder

1/4

tsp salt

1/3

cup water

1.

Add nuts to blender

2.

Add lemon juice and seasonings.

3.

Add water and blend until smooth.

Refrigeration causes the cheese to solidify and the

flavors to develop more fully.  But it tastes wonderful fresh from the

blender as well.

Note: If you don't like the tan color of the cream cheese, you can use peeled,

slivered almonds or all macadamias. Using only macadamia nuts will create a

richer cheese. Not a bad thing! ha ha

My husband has taken this to work and his very NON-vegan coworkers love it.

Enjoy!

Your welcome!

Don't let expensive macadamias keep you from making it, though.

I've made it with just almonds and it comes out just as tasty.

If you like, I can send you a link to the video of Rhio making it.

You have to have the Realplayer software on your hard drive in order to watch it

though.

Let me know,

Valerie :-)

Dear Vegan/Gluten-Free Group,

What is the recipe for the nut cheese.  Is it easy to make?  Could it be made

with pecans or walnuts?  Where can I find the recipe?  Is it sliceable?  I'm

looking for a good sliceable recipe.   Thanks, Patti

Hi Patti.

The recipe is more of a cream cheese.  I don't see why it wouldn't work with the

nuts you mentioned.  I have made it with cashews also, but that makes a

thinner,less dense cheese.

I did find some nut cheese recipes in the April 09 issue of Vegetarian Times.

There's a cheddar flavor that is slice-able.

I also came across this recipe on the Veg Times website.

It's for a garlic and herb brazil nut cheese.

Here's the cream cheese recipe. Enjoy!

P.S. If you feeling especially decadent and have a little cash to splurge, check

out this site: http://www.dr-cow.com/products/aged-cashew-nut-cheese.html

We got some a couple of weeks ago and it was amazing! My non-vegan husband loved

it. And he is a BIG cheese fan.

I recently found The Uncheese Cookbook at my library, and have

enjoyed the recipes. It's been replaced by The Ultimate Uncheese

Cookbook, which I haven't

read:

http://www.amazon.com/Ultimate-Uncheese-Cookbook-Delicious-Dairy-Free/dp/1570671\

516/ref=pd_bbs_sr_1?ie=UTF8 & s=books & qid=1241289868 & sr=8-1

Both books are probably pretty similar, I would imagine, and I found

a lot of cheese type recipes that either are GF or could easily

become GF. I've been eating low fat vegan for a few years now, and

so I was especially happy to see so many good recipes without

oil. Now that I'm adding GF to the mix, I'm glad to see her recipes

will still work!

Yes, I've been reading about this book for a while.

I need to pick up a copy. Thanks for the link.
