Book Group meeting

Next week, I having the Book Group over to my house. The host always

provides food - buffet and fingerfood. While some of the members bake

brie en croute, etc., they know I eat differently. So far, I'm thinking

I'll make:

 

pasta salad (olives, dried tomatoes, artichokes, capers)

guacamole and veggies

broiled zucchinis and tomatoes in olive oil and balsamic

fresh strawberry pie or pie-lets.

 

It seems to me I need some starchy thing to munch on - something like

focaccia, biscotti, dinner rolls, crackers. I'm not actually that good

a baker (but can manage pie crust and reliable things) and just have a

handheld mixer and food processor so far. I haven't had any luck yet

with getting cheez textures right. Something simple, preferably

make-ahead? (I don't eat gluten, oats, soy, cashews, peanuts, quinoa,

amaranth or buckwheat - regular GF mixes are fine.) And something

pleasing to the " mundane " (omnivore, non-GF) palettes!

 

Also, can someone tell me how to make coconut milk whipped creme for the

pie? Otherwise, I'll use coconut ice cream.

How about popcorn or add tortilla chips to your veggie and guac combo?

I was about to give you a couple of good cracker recipes, but they contain

buckwheat and quinoa (arggh).

 

I make coconut cream this way (in general it's simple and pretty fool

proof):

Refrigerate a can of coconut milk (whole) for a couple of hours or more

Creamy part of coconut will rise to the top when chilled

Remove cream

Add 1/3 cup of powdered sugar

Beat with mixture until blended and whipped (couple of minutes)

Sometimes I add a couple of Tablespoons of coconut liquid to the mixture, if

it feels to thick.

Could you just put out a bowl of nacho chips?? Our local Walmart sells a gluten

free brand and it would be simple.

The rest of your menu looks great!? If you live near Dallas you might find that

you have an extra guest show up for Book Group.?? (Me!)? LOL!
