I make great food if I find good recipes but I never manage to " toss things together " and come up with a great dish. Except last night I had a winner. my kids wanted pasta and tomato sauce for dinner last night I sauted one large vidalia onion (chopped finely) in veggie stock. added lots of garlic. then I tossed in a bottle of tomato paste (I think it was 7oz), I whizzed a can of diced tomatoes very quickly so that they were not as chunky but not entirely smooth. then I put about 4 or 5 good hands full of carrots into the blender with a can of tomato sauce plus 2 dates. blended till smooth added oregano with a heavy hand. added 1/ 2 cup raisin riesling vinegar cooked it on low for an hour or so. then I blended half a cup of cashews in 1 1/2 cups water and added it to the tomato sauce. I don't cook with salt, but this would be the time to add salt if you eat salt My husband could not believe this was a dairy free sauce. he was convinced I'd put in cheese and cream. My daughter decided to just eat the sauce as a soup instead of putting it over her pasta. I was shocked at how good it tasted. Shez Quote Link to comment Share on other sites More sharing options...

Isn't it great when something we throw together comes out great?? I like to make my own garden style sauce with zucchini and mushrooms (preferably baby bella), some spinach if I have it and roasted red peppers. Lately I've discovered fire roasted diced tomatoes and the flavor is so phenomenal! Especially with grilling season on the horizon, they are my new addiction! I'm going to try your recipe with the fire roasted tomatoes! The cashews are a great idea for a cheesy sauce! Now I'm craving spagghetti! mmm.... thanks for sharing!
