Guest guest Posted March 24, 2009 Report Share Posted March 24, 2009 When I went vegan, I told my hubby that I would be cooking veg, but that he could cook his own meat or have meat when he was out other places. He went veg about a year after I did. We deal with multiple allergies amongst us, and I don't make separate meals. I cook one meal that does not include any of our allergens, if someone wants something else while they are out of the house that includes someone else's allergens but not their own, that's fine. But keep it out of the house. Remember that there are probably plenty of foods that your hubby and son like that are easily adapted to vegetarian. Pancakes, stir fries, chili, curry, PBJ, etc. There are lots of things that you can eat or have on hand that are quick and healthy. You certainly sound like you are working in the right direction. I am looking for family friendly dishes and have already found a bunch just reading the posts and searching the recipe database. I made a great dish tonight, I thought I would share. Zucchini, tomatoes, and garlic with basil, salt and pepper. It's simple and fast and two of my three kids loved it. I will serve it with brown rice and beans next time, to give it more protein. I only served it with rice and salad tonight, and we were all hungry before bed. I am so glad I found this group. Thanks for letting me join. Guest guest Posted May 21, 2009 Report Share Posted May 21, 2009 -I made a dish nearly identical to this one during our summer (we are right into a cold wet winter now) but used onion instead of garlic and topped it with dried breadcrumbs. I cooked it quite slowly for over an hour. It was really tasty and I made it for many meals. It is quite a light dish and some protein would make it more filling i.e. sliced tofu dipped in brown rice flour, onion powder and nutritional yeast flakes is nice and very quick. I dip the slices in cold water and then into the flour mix and it works well. Would recommend this highly. Would be good also for an easy lunch dish.
