I've made it before, but I find it a little dense and I was wondering if anyone had advice on making it fluffier/moister/lighter. I read on a product review on Amazon the idea of using 1/4 cup olive oil + 1/4 cup coconut oil instead of the 1/2 cup of canola oil. Any other vegan friendly suggestions?
