Cherrybrook GF Chocolate Cake Mix

Hi,

 

I have a box of Cherrybrook GF Chocolate Cake Mix sitting in my cupboard. I've

made it before, but I find it a little dense and I was wondering if anyone had

advice on making it fluffier/moister/lighter. I read on a product review on

Amazon the idea of using 1/4 cup olive oil + 1/4 cup coconut oil instead of the

1/2 cup of canola oil. Any other vegan friendly suggestions?

Just a thought, but what about subbing in applesauce?

I used coconut yogurt but they where still kind of dense.

 

I have heard that soda water will help give a lighter/airier texture to

baked goods.

you'd use it in place of water. If it doesn't call for water, use in place

of 1/3 of the liquid (ie. calls for 1 cup of buttermilk, use 2/3 coconut

yogurt and 1/3 soda water)

Yes, I use soda water or a combination of apple cider vinegar and baking

soda to get more lift in some of my gluten-free, vegan baked goods.
