Betty Crocker Gluten Free Baking Mixes

They are kosher but I can't find ingredient lists so no clue what other

allergens are in them. I would guess corn and rice and they are common and

cheap! They are not in my area yet. If anybody finds them, please share what's

all in them. They have them on amazon.com but no info! Anyway, even if they are

not good for most of us, it's still promising to see Betty Crocker making gluten

free products! :)

Wow! Gluten-free has hit the mainstream! :-)

 

I'll keep my eye open for them locally.

I found them at Kroger 2 days ago. We are not vegan but cannot have casein. I

ended up getting the cake mix, brownie mix, and cookie mix. In looking at the

ingredient lists I don't see anything that makes me think it is not vegan (there

is no gelatin), it does have Kosher Pareve on the front.

I forgot to say that the only allergen that I see (from the top 8) is soy.

There is rice, and potato in all 3 that I got and the brownie also has corn.

Gluten-free baking: the last of the best scratch bakers ... Betty Crocker

has outdone us. Again. And she's not even alive to appreciate it. (that

was in jest, btw) Although, like any boxed mix, I doubt they are as superb

as the stuff you all can whip up!

Is there millet in any of them? I get terrible migraines from millet and I

really don't want to take a chance ordering them online without being sure

they are safe. Thanks for sharing info for those of you who have found them.

I did e-mail the company for ingredient lists but have not heard back yet.

 

Eggs and milk are easily subbed in preparation. For cream/buttermilk I have

been using coconut yogurt and that works really well in recipes. Earth

Balance works perfectly as butter in baking and now they have sticks!

 

I seen on a blog someone added pudding mix to the yellow cake mix for a

moister cake. I thought about trying a soy pudding mix and mixing in candies

fruit to make fruit cakes. I would use mini bunt cake pans just because I

like them!

 

Anyway, that's some ideas to play around with, BC mixes or others!

Yes, the instructions call for margarine and eggs and although I have not

heard of any reviews using subs I see no reasons why it wouldn't work. They

do not have millet. The reviews I have heard have been really good, right

down to a taste test w/gluten eatting people doing a blind taste test. They

picked the gluten free as the one they thought contained gluten! I will be

fixing them tonight for this weekend and let you know. I so hope we agree

with the reviews I have heard!

I just picked up two of the mixes from Fred Meyer. The store had them mixed

in with the regular cake mixes and such. As for ingredients, they are

pretty simple and surprisingly few for a box mix.

The white cake mix is as follows: rice flour, sugar, potato starch,

leavening (baking soda, sodium acid pyrophosphate, monocalcium phosphate),

xanthan gum, salt. May contain soy ingredients. You add 2/3C water, 1

stick butter, 2 tsp gf vanilla and 3 eggs.

 

The chocolate chip cookies were very similar (except I threw out the box so

I can't type them here for you). You just add I stick of butter, 1 egg and

1 tsp gluten-free vanilla. I did make them tonight for my non-allergen

friends as sort of an experiment however. Nobody had any clue they were

gluten-free even. They were well liked.

 

My other assessment is that they contain A LOT of sugar. I felt the cookies

had bit of a gritty feel to them, but none of my friends noticed. I'm sure

if you want an easy cookie snack for the kids (and you are willing to sub

ingredients to make them vegan) they would be a hit.

I found them at Fred Myers and bought the brownie mix. I subbed flax goo and

baking powder for the eggs. I did use butter (I'm not vegan - sorry). The

instructions say to pull out of the oven when the toothpick is nearly clean. At

28 minutes the brownies were still very gooey. At 32 minutes no change. At 36

minutes they were still very gooey underneath a crisp crust. I decided they

would be rock hard if I cooked until the toothpick came out " nearly clean " so I

pulled them out of the oven. Yes, they were gooey, but after they cooled they

weren't too gooey to eat. They actually taste very good. I thoroughly enjoyed

the first " brownie fudge sundae " that I've had in years.

 

Here's what I'll do different next time: I think 1/2 the " solid

butter-substitute " would be sufficient. I think I might try a mashed banana or

fruit baby food instead of flax goo, or if I use the goo I'll add 1/4 cup of

some starch (potato, tapioca or corn). This recipe might actually do fine with

the baking powder/soy flour/water egg substitute instead of the goo.

 

I will definitely buy these mixes again! I'm a " from scratch " baker, but

sometimes it is just so much easier to use a mix.

I tried the brownie mix, too, and had a similar experience. I used Ener-G

egg replacers for the eggs, and I used prune puree for the butter. I

baked them about 10 minutes longer than suggested and they were still gooey in

the middle, but I took them out of the oven. The crusty ones were very

hard; too hard for my son with braces to eat! The middle ones stayed a bit

gooey. I'm not sure if I'll make them again. Despite all the texture

issues, the flavor was very good.
