Guest guest Posted July 6, 2009 Report Share Posted July 6, 2009 Hi All, I am new to getting off of wheat/gluten. I have done so because my mental accuity is so much sharper- I am astounded. Colors and life are so much more vivid. I really think I used to be kind of spaced out or at least I am less so now. My question is that at times, I am very hungry. I go along in my day starting with oatmeal for breakfast, but all of a sudden it is a sharp drop and I am really hungry and eat 2-3 plats of food. I am not gaining weight. I too felt astonished and pleased by increased mental and perceptual clarity. I also had a greatly increased appetite. I spoke to others at the time who had similar experiences. It may be body wisdom urging us to eat the food that is healthier for us. Drs. Furhman, Ornish and McDougall say: when you eat a low-fat vegan diet based on whole foods, you can " eat more and weigh less " . Deborah Hi All, I am new to getting off of wheat/gluten. Guest guest Posted July 6, 2009 Report Share Posted July 6, 2009 I wonder if maybe you need a little higher protein in the morning to make digestion and the attendant engergy levels last a little longer. Maybe adding some hemp hearts/seeds or hemp protein powder to your oatmeal along with some fruits would make you feel better. High seeds are especially high in amino acids, but you could also try adding some ground nuts if you like those better. Many people on a vegan diet eat 5 or 6 meals a day instead of 3 just to keep their energy levels up. Vegan food is more easily digested especially gluten-free, and your body may just be finding it's own at this time since you are still probably detoxing. From what you have said, you had a typical brain response to gluten intolerance. Last year I attended a natural cooking class with Christina Pirello at Drexler University (she's the author and star of " Christina Cooks " on PBS and cured herself of cancer with food--macrobiotic/vegetarian/vegan) anyway, here's what I learned that works great for me to maintain my sugar levels and hunger issues all day--I start with a small bowl of miso soup full of good stuff (shaitake mushrooms, daikon, carrot, cabbage, waikame) along with a small bowl of grains (quinoa, oatmeal buckwheat groats, amaranth/teff or millet) and a large serving of steamed dark leafy green veggies. Lunch is usually salad, soup and maybe a slice of whole grain bread with a nut butter. Snacks, when I need one, is usually fresh veggies with hummus, granny smith apple with penaut butter, rice cakes with a nut butter....things like that. What I learned is not to start my day with fruit---the natural sugars will cause fluctuations in my sugar levels and then it's up and down all day and I don't function as well and I tend to be hungrier and eat more. So I keep my fruit to a minimum. Make sure you do eat good whole grains and proteins. Eat more proteins in the morning if you will be doing alot of physical activity---a tofu scramble with lots of veggies would be another great way to start. Happy cooking! Guest guest Posted July 7, 2009 Report Share Posted July 7, 2009 for years ive given up oj in the morning for v8 or tomato juice. it's an old weightwatchers trick....dont waste fruit (limited, at least in the old days) when you could have vegetables (which were and still are mostly unlimited) and now i couldnt imagine having lots of fruit in the morning. but i think i want to beef up (so to speak--been vegetarian for 20 yrs) my protein intake snackwise during the day, got to add more vegetables too. ive got a terrible sweet tooth which manifests itself with pretzels and popcorn. all the same really. turns to sugar. got to slice up those vegs at night so theyre ready for a day of snacking. thanks for this. it reminds me of the two wks in japan where miso soup was always an option at the hotel bkfst buffet. question: for a tofu scramble do you use firm, extra firm? i usually prefer eggs well done but would extra firm " scramble " ? >HI all- >I don't post much--usually I just hang out and learn so much from >all of you.
