Cake or Cookie /biscuit recipe - no sugar

Are you looking for no cane sugar/corn syrup, or one that uses stevia

or artificial sweeteners? Are things like dates, honey, maple syrup

okay?

-Hi Pam,

Pref with stevia but dates are ok and maple syrup and honey in small amounts.

Here is one I have been working on. I am trying to make a cookie that

will work for all of my friends and family events. It is therefore

gluten-free, vegan (if using one of the alternatives to honey),

soy-free, rice-free, no corn syrup or cane sugar, no apple, no

cinnamon, chocolate, or vanilla.

 

It is not grain-free, as I have not experimented with any other flours

in it. You can probably leave the xanthan gum out without them

falling apart. They were not sweet enough with just the dates, so I

added an extra tbs of sweetener, use whichever one works for you.

They are the nice golden brown of a molasses cookie, without the

molasses.

 

I apologize that the dates are weighed rather than a volume measure.

I use both loose dates and a compressed block of baking dates, so I

weighed them when creating the recipe so I could be consistent no

matter what kind of dates I had on hand! Hopefully you have a kitchen

scale or a package marked with the dry weight of your dates.

 

 

Emily’s Ginger Cookies

 

200 g/14 dry ounces dates (soaked for an hour or two)

3 tbs oil (I used canola)

2 tbs date soaking water

1 tbs honey/maple syrup/agave nectar

 

1 1/4 c sorghum flour

1/2 c tapioca flour

1/4 tsp baking soda

1/4 tsp xanthan gum

1/8 tsp ground ginger

1/2 tsp nutmeg

 

1. Preheat oven 350F

2. Process first four ingredients (drain the dates) in food processor

until very smooth.

3. Whisk together the dry ingredients, add them to the wet ingredients

and process/stir together

4. Form 1 – 1 1/2” balls, flatten cookie try lined with parchment.

They will not spread. Bake 11 min.

5. Makes approx 21 cookies

That's really neat, Pam. Thanks for sharing this recipe. I've been wanting

to experiment with dates more after falling for Lara bars!

I think they would also work as graham crackers, if you leave out/go

light on the spices and roll them flat. I may use this base for a few

different cookies.
