Hi Everyone,

I shared a recipe on another message board recently and got TONS of feedback...?

People thanking me for the recipe.? It's one I invented (I do that a lot!) to

use up leftovers.? Such a simple recipe for soup... So simple that I'm hard

pressed to call it a recipe.? Anyway, it occurred to me that there aren't many

resources for people like us who are vegan and gluten free.? And I think the

fact that we are able to feed our families this way is a real accomplishment!?

On top of that, I'm trying to do this as frugally as possible and avoid using

expensive gluten-free products from the store.? So, I've decided to blog about

my adventures in the frugal, vegan and gluten free world!? I just posted my

first post as an introduction.? If you're interested in following along, I'll be

posting recipes and various successful experiments as time permits...

I'm looking forward to reading on your blog, as I'm always looking for ways to

make fast, easy meals.

 

 

Last year I came up with what I call my 'Summertime Stew' and am working on how

to make it without cous-cous; it is good for using whatever dented cans of food

are found on the discount shelf. I take a can or two of diced tomatoes or

sauce, canned or frozen vegetables, and some canned beans, along with whatever

herbs sound good at the moment, and some cooked millet; this can be heated in

the microwave and/or kept in the fridge for a few days. Depending on your

preference, it can be made watery like a soup, or thick enough to be a sandwich

spread.

 

 

One could also saute some onions, red potatoes, and/or bell peppers to give some

extra flavor; as a liquid for saute, I'll get the last of the sauce or mustard,

etc, out of a jar with a bit of wine that has been open for a while. Millet

cooked longer (30 minutes) with more water (1/3 ratio) can be used as

'wheatless' bread crumbs.

Have you tried it with buckwheat groats instead of the cous cous. I

have two rice steamers so I can make the stew or soup in one, then the

rice, buckwheat or oat pearls (etc) in the other and combine them for

service. My whole family was amazed how well the buckwheat groats

went in a green pea stew I made on monday.
