Not exactly healthy food, but the other day I made

some raw coconut macaroons, and they were amazing!

Very easy too.

 

I put some macadamia nuts in a food processor until

they became flour-like, then added some soaked dates,

honey and agave syrup (you could just use agave and/or

dates if you don't like to use bee products) and lots

of dried coconut. Then I rolled the mixture into

walnut-size balls in my hands, flattened them and put

them out in the sun to dehydrate (I don't have a

dehydrator).

 

The outsides became crispy and the middles were chewy

and everyone adored them!

 

I think this would work well with almonds too, and

maybe a little vanilla pod. Not an ideal food, but

good for special occasions or keeping the cravings

away.

Any idea where I can find raw macadamia nuts? I have tried several

local health food stores and can't locate them.

I'm lucky enough to have moved to a town with a shop

which sells cooked and raw nuts, each clearly

labelled. Not that it's easy to be 100% sure that

what they label as raw is what I would consider raw,

but the owners are into high % raw food so I feel

reasonably confident. The only thing they don't have

is raw cashews, which they say need some steaming to

open or something...

 

But I'm afraid I live in the UK, I don't know where

you'd look in the US - online perhaps?

I go to a place that says it has raw cashews which I have read many

times cannot be truly raw. However, I bought some and soaked them

overnight for one of the recipes I was trying and over half of them

sprouted! I'd appreciate any insight as to why.

Just what I needed today. We were given a whole case of overripe bananas

and I need to do things with them TODAY! I am sure three hungry teens will

very much appreciate these.
