Guest guest Posted August 4, 2009 Report Share Posted August 4, 2009 I'm soooooooooo very excited to say that the other day when shopping at a " regular " local supermarket I stumbled upon a gf, kosher, acceptable for passover, vegan pasta noodle!!!! The ingredients are as follows...potato starch, potato flour, salt, and beta carotene!!!! I found macaroni style and thin noodles. The brands is Gefen and the manu is Kenover Marketing Corp out of Brooklyn, NY. I'm outside of Chicago. I called Kenover and asked if this was a temp item but they said was a permanent item. When looking at their site it does state it has eggs in the ingredients so that is why I called to see if it was a temp thing. Very excited I no longer have to make my own pasta!!! And does anyone know what the beta carotene does...why is it an ingredient? Guest guest Posted August 4, 2009 Report Share Posted August 4, 2009 Pasta machines are very fun!!! But its sooo nice to have boxed pasta on hand! The very first pasta I made turned out really nice but didn't taste great. That recipe is on my blog. The original recipe I've been working off of was found on Bob's Red Mill site under their list of gluten free pasta recipes. It was the only one without eggs (and gluten free). It called for rice and I changed it from rice to sorghum (which I wouldn't suggest...it was too grainy of a texture). Now I use a mix of tapioca starch (I think) and for sure fava/banzo flour, a bit of sugar, pear juice, oil and water. I'll make it again in the next few days and tell you what the exact ingredients are. I've been playing around for quite some time to get a good taste. But since recently tasting rice pasta my homemade pasta seems to taste better! But in the mean time check out Bob's site or my really old posts on my blog and you can get the amounts and come up with your own ingredients. My Asian market also carries a number of other kinds of noodles made from arrowroot, yam, tapioca, or others. Actually, I did make my first gf " ravioli " type pasta the other day when I adapted a pastry recipe..which was WAY easier then I thought. First I lightly fried it in the pan and then the rest of the dough I made " ravioli's " with and boiled them. It was pretty good. I'm sure you could use any gfvegan pasta recipe and roll it out. I do not have any attachment...just my hands lol!
