Looking over your recipe I see it calls for 3 eggs, which is not an option as I'm allergic, as many on the group are, or at least strict vegans! Have you experimented with an egg free version of this bread? I have not had any success in trying to make bread like this and for someone who's never liked bread, I'm obsessed with wanting Italian bread! Guest guest Posted August 6, 2009 Report Share Posted August 6, 2009 I find the vegetable puree works better for breads than energ egg replacer or flax meal as those two come out pretty gummy. To replace for three eggs I would use 1/2 cup (2 Stage 1 baby food jars) of pureed squash, carrots or sweet potato and then replace 1/4 cup of the flour with chia seed, which also acts as a binder but is much smaller than flax and less likely to make things gummy. Guest guest Posted August 6, 2009 Report Share Posted August 6, 2009 I've experimented with various egg replacers. The only bread that I ever got to come out right was the BRM raisin bread. I've pretty much given up on bread making because of wasting food and money. I'd really love to have an Italian bread that I could enjoy with my family when we go out or when they are brave enough to try my food. I will try mixing the flaxseed and ener-g as I have not tried them combined. Cross fingers and hope for best! Thanks for the idea!
