products of gases from beans and how to deal with them.

I don't Deborah, but I posted the title when LaDonna asked ...

American Classics III, Red Beans and Rice but as I warned LaDonna, he

uses pickled pork in the recipes so you may wish to skip that part and

just get on to the beans information.

Yah, I checked out his website and he does seem to be a BIG meat eater!

 

Maybe, could you just give us a summary of the info you thought was interesting

about the red beans and rice recipe?

Well Alton is a food chemist so one really needs to hear his

explanations Deborah, but later, when I am feeling better, I can give

you a synopsis if you prefer. I have a massive staph infection on my

abdomen and have been sick going on three weeks now, so not in the

best brain place for making total sense.

Hi,

 

I watched it too. Alton said to not bother with the soaking step. I've not

soaked my beans either for years. By the way, I mostly use my rice cooker for

cooking them.

 

About the gas issue he just said the best thing is to give it time for the

system to get used to it. Something to do with time for the good type of gut

bacteria to grow, I think.
