Deborah Alton Brown has a very interesting episode which deals with the products of gases from beans and how to deal with them. American Classics III, Red Beans and Rice but as I warned LaDonna, he uses pickled pork in the recipes so you may wish to skip that part and just get on to the beans information. Maybe, could you just give us a summary of the info you thought was interesting about the red beans and rice recipe? Deborah I don't Deborah, but I posted the title when LaDonna asked ... I have a massive staph infection on my abdomen and have been sick going on three weeks now, so not in the best brain place for making total sense. Guest guest Posted August 18, 2009 Report Share Posted August 18, 2009 Hi, I watched it too. Alton said to not bother with the soaking step. I've not soaked my beans either for years. By the way, I mostly use my rice cooker for cooking them. About the gas issue he just said the best thing is to give it time for the system to get used to it. Something to do with time for the good type of gut bacteria to grow, I think.
